Chocolate brownie. Brownies at home
Video recipe
First you need to prepare a water bath. This is a design made from a ladle or pan and a glass or metal bowl (you can take a smaller pan). I recommend taking a metal bowl, or a glass one, but there have been cases when the glass has broken.
So, put water in a ladle or pan (about 2-3 cm). Place on low heat, and when the walls of the ladle are covered with small bubbles (which means the water will soon boil), place the metal bowl on the ladle and use it for its intended purpose. The water should not boil too much in the ladle and the bottom of the bowl should not touch the water; everything here is cooked using steam.
When the water bath is ready, you can melt the chocolate. To do this, you need to break the chocolate bar into slices and cut the butter into cubes. The most important thing is to remove sources of moisture away, because if even a drop of water falls into the bowl, the chocolate will curdle. Do not cover with a lid under any circumstances; condensation may get into the chocolate.
When the chocolate and butter become one single mass, you can add sugar. Stir with a spatula and let it dissolve into the chocolate. Do all this in a water bath.
Remove the bowl from the water bath (we no longer need it). Allow the sweet chocolate mass to cool slightly, as the eggs may curdle under the influence of high temperature. After 5-6 minutes, add one egg at a time, actively stirring with a whisk after each added egg.
The mass should be shiny and homogeneous.
Sift the flour into a bowl with the chocolate-egg mixture.
Mix thoroughly with a wide spatula. There should be no lumps, otherwise there will be white flour spots in the finished brownie.
Line a baking pan (mine is 15 x 15 cm) with parchment paper, this will make it easier to remove the cooked brownies. If you do not use paper, then you need to grease the mold with oil and lightly sprinkle with cocoa.
It may seem to you that a brownie is an ordinary chocolate cake, cut into portions, but do not even think about telling Americans you know about this, because you risk causing severe offense. After all, for them it is a national dessert. Its popularity in its homeland is so great that this cake with a crispy crust and moist middle has literally become a cult favorite.
Brownie is a classic American dessert that was first prepared at the famous Chicago hotel in 1893. Chocolate cake quickly became popular and spread throughout the world, so it is not surprising that it is now served not only in restaurants and cafes, but also cooked at home.
When you try this simple, but at the same time amazingly tasty delicacy for the first time, you will probably have a desire to thank its creator from the bottom of your heart. Below we will tell the history of the famous cake and interesting facts:
- There are three legends about the appearance of brownies. The first one tells about a careless chef who accidentally added chocolate to breadcrumbs. The second is about a cook who forgot about flour. The third is about a housewife who was in a hurry to bake a dessert for unexpected guests, but forgot to put baking powder in it. There was no time to redo it, so she served the resulting flat result to the table, cutting it into pieces.
- The classic brownie contains only chocolate, butter, sugar, eggs and flour. If you use dark chocolate, then the amount of sugar is increased slightly to balance the taste.
- Chocolate brownies contain minimal flour and no baking powder at all; cream is used instead of butter.
- Brownie cupcakes contain a little less butter and more flour than in the classic recipe, but they add a little baking powder. The softened butter is whipped with sugar, not melted chocolate. The resulting air mixture helps the cupcakes rise better.
- Brownies are more chewy thanks to the addition of caramel.
- Brownies without chocolate, with brown sugar, butter and eggs, similar in texture to cupcakes, are called "blondies".
- Brownies are considered a food that helps show your tender and reverent feelings for the person you are serving it to.
- Brownies have their own holiday, celebrated annually on December 8th.
- Wikipedia gives two meanings for the word "Brownie". First, these are fabulous, tiny, good-natured brownie people who help people secretly, at night. The second definition is a small sweet cake made from chocolate. We combine concepts No. 1 and No. 2, and we get “fairy cakes.”
We have prepared several truly fabulously delicious Brownie recipes, from which you will definitely be able to choose the most suitable one for yourself, which will definitely become your signature one.

Is it true that previous brownie recipes make you involuntarily lick your lips after reading them? Imagine how delicious it will be if you combine them and make a curd-cherry brownie.

Brownies in a slow cooker
The multicooker is a technical achievement, praised by the housewives of this world. This device also successfully copes with the preparation of the signature American dessert. A brownie cooked in the slow cooker will have just the right moisture and texture.
Required ingredients:
- 2 bars of extra dark chocolate;
- 3 eggs;
- 2/3 tbsp. Sahara;
- 1 pack vanilla;
- 0.15 kg butter;
- 1 tbsp. flour;
- 20-40 g cocoa;
- 1/3 tsp. baking powder;
- a pinch of salt and spices to taste.
Preparation procedure:
- Traditionally, melt the chocolate and butter in a water bath and let the resulting mass cool to room temperature.
- Mix eggs with regular and vanilla sugar without using a mixer.
- Mix chocolate and egg mixtures.
- Add flour with baking powder, salt, cocoa and spices (cardomom, ginger, cloves, cinnamon), mix until the dough becomes completely homogeneous.
- Transfer everything into a greased multi-cooker bowl. Cook on the “Baking” for about 45 minutes. True, the brownie prepared in this way does not have a traditional sugar crust, but this does not make it tasteless.
Homemade brownies with cocoa
To make brownies according to this recipe, you will have to work hard and look for really high-quality cocoa (we remind you that Nesquik does not belong to the category of cocoa).
As you can see, baking powder is not listed among the ingredients, so don't expect the dough to rise. It will be exactly as it should be, not high with a moist core.
Required ingredients:
- 0.1 kg butter;
- 0.1 kg unsweetened cocoa;
- 1 tbsp. sugar (a little less is possible);
- 3 eggs;
- ½ tbsp. flour;
- a handful of nuts;
- a pinch of salt.
Preparation procedure:
- Heat the oil in a steam bath, mix it with eggs, cocoa and sugar.
- When the oil mixture has cooled to room temperature, add the eggs to it separately.
- Separately mix the sifted flour with nuts, add the liquid mass to them, mix thoroughly. If you do the opposite, adding flour to the cocoa mass, it will be almost impossible to get rid of the resulting lumps.
- Line a suitable sized square or rectangular pan with wax paper and pour the dough onto it. In a preheated oven, baking time is from a quarter of an hour to 25 minutes. Depends on your preferences and the desired degree of doneness of the cakes.
- Once the brownies have cooled to room temperature, place them in the refrigerator overnight. Served sprinkled with powder and cut into small portions.
There are several common mistakes made when making brownies. They seem to be quite insignificant, but they spoil the final result quite noticeably. If you ignore the recommendations below, you risk leaving yourself and your loved ones without the perfect brownie.
Simple steps to achieve chocolate perfection:
- Add the ingredients into the flour, and not vice versa, as many are used to doing. This way you will be able to get rid of lumps that can seriously spoil the desired result.
- Eggs should only be at room temperature. Cold eggs will make the texture of the dessert denser than you would like. Remove eggs from the refrigerator an hour and a half before baking.
- After placing the brownies in the oven, check them several times before the end of the cooking time specified in the recipe.
- Do not ignore such an achievement of civilization as a kitchen timer. We hope there is no need to explain why it is needed. Keep track of the time and check the readiness of the brownies.
Brownie is one of the most popular desserts in the USA and Canada. They can be found in any cafe and pastry shop, and lovers of home baking are sure to bake them at home. Brownies are usually served with coffee or ice cream, and American children will never refuse milk and brownies. For many Americans, these brown squares have a calming effect, reminiscent of childhood and home comfort. This is a typical example of comfort food (nourishing, high-calorie, homemade food that evokes nostalgia for the past and other bright feelings).
Essentially, a brownie is a cross between a rich chocolate cake and a dry cookie. The perfect brownie has a dry crust and a moist, gooey filling. Sounds delicious? Let's try to make brownies according to all the rules.
Let's start our acquaintance with brownies with a classic English recipe from the tireless Jamie Oliver. You can try these luxurious chocolate treats at his London restaurant Fifteen, and we'll show you how to make them at home. The main secret is the best and freshest products you can find.
Brownie "Fifteen"
Ingredients:
250 g unsalted butter,
200 g dark chocolate with 70% cocoa content,
80 g cocoa powder,
70 g flour,
1 tsp baking powder,
350 g fine sugar,
4 large country eggs,
Optional:
150 g dried cherries,
150 g nuts (pecans, macadamia, walnuts, Brazil),
250 g creme fraiche or sour cream,
zest of 1 orange.
Preparation:
Melt the butter and chocolate over a double boiler (in a large bowl set in a saucepan of gently simmering water) and stir thoroughly. Add cherries and chopped nuts if desired. Separately mix the sifted flour and cocoa powder, baking powder and sugar, add this mixture to the chocolate butter and mix well. Beat the eggs and add to the dough.
Line a rectangular pan (about 30 cm) with baking paper. Pour the dough into it and place in an oven preheated to 180ºC for about 25 minutes. Checking the doneness with a skewer will not help: if it comes out clean, it means it is overdried and will turn to stone. The cake should spring back at the edges and remain chewy in the middle. The chocolate will set at room temperature, so don't be afraid to remove the brownies when they're slightly chewy. Let the cake cool on a wire rack, transfer to a cutting board and cut into large squares or triangles. Serve the brownies with crème fraiche sprinkled with orange zest.
If you suddenly get tired of the classic brownie, add dried fruits (raisins, prunes, dried apricots, candied fruits), candied fruits, marmalade, strong alcohol (rum, cognac, liqueur) or dried fruits soaked in it to the recipe. If this is not enough, switch to heavier substances, for example, these:
Brownie "3 chocolates"
Ingredients:
180 g dark chocolate,
50 g milk chocolate,
50 g white chocolate,
200 g butter,
100 g flour,
50 g cocoa powder,
3 eggs
250 g brown sugar,
a little salt, vanilla.
Preparation:
Melt the butter with dark chocolate in a water bath or in the microwave, cool to room temperature. Using a mixer, beat the eggs with sugar until white, pour in the cooled chocolate butter, and mix gently. Pour flour and cocoa into the mixture through a sieve, stir, add salt and vanilla. Chop white and milk chocolate into small pieces and add to the dough. Place the dough in a form lined with paper, place in an oven preheated to 180ºC for 25-30 minutes. To check for doneness, rock the pan slightly: if the middle is not baked enough, a wave will appear there. In this case, leave the brownies in the oven for another 5 minutes. Cool the brownies directly in the pan, then remove along with the paper and cut into squares or triangles.
Brownie with cream cheese
Base ingredients:
100 g butter,
100 g dark chocolate,
200 g sugar,
2 eggs
70 g flour,
a pinch of salt and vanilla.
For the top layer:
250 g cream cheese (Philadelphia, Mascarpone, Boursin),
1 egg,
60 g sugar,
vanilla extract - to taste.
Preparation:
Preheat the oven to 160 ºС, cover the baking dish with foil. Prepare the base: melt chocolate and butter in a large bowl, add sugar and vanilla, mix. Add eggs, then flour and salt, beat until smooth. Pour the dough into the mold, reserving a little for decoration. To prepare the cream, beat the cream cheese with a mixer until soft, add sugar, vanilla, egg and continue beating until smooth. Place a layer of cream on top of the base. Decorate the top with drops of brown dough and use a knife to make streaks. Bake the brownies for 25-30 minutes. A sign of readiness is the browning of the cheese layer. Without removing from the pan, cool the brownies on a wire rack and refrigerate for several hours so that you can cut the cake without bruising it. Use a thin, sharp knife to cut the cheese brownies.
Of course, such a brownie is a very high-calorie and heavy dessert. You need to control yourself so as not to eat everything at once. If you are not sure of your endurance, prepare a slightly lighter version first. But remember that such brownies cannot be called dietary, because they also contain sugar, chocolate, and butter...
Light brownies
Ingredients:
0.5 cups olive oil,
2 eggs
0.5 cups of espresso or Turkish coffee,
0.5 cups brown sugar,
1 cup flour,
0.5 tsp baking powder,
300 g chocolate,
1 tsp vanilla extract.
Preparation:
Mix butter, coffee, sugar and vanilla extract, add beaten eggs, mix thoroughly. Add flour, baking powder and melted chocolate, mix well and place in pan. Bake in an oven preheated to 180ºC for 35-40 minutes. Cut into portions when completely cool.
Despite the name, brownies do not always contain chocolate. Brownies without chocolate are very popular in politically correct America, where they are called blondies. The basis of the taste and aroma of blondie is brown cane sugar. Due to the lack of chocolate, the consistency of the blondie will be quite dry, but otherwise everything is very similar to a brownie.
Blondie
Ingredients:
1 cup brown sugar
1 egg,
0.5 cups butter,
0.5 tsp baking powder,
1 cup flour,
0.5 cups chopped nuts or chocolate pieces,
salt, vanilla - on the tip of a knife.
Preparation:
Preheat the oven to 180ºC. Grease the mold with butter and sprinkle with flour. Combine melted butter and sugar, add beaten eggs and vanilla and beat thoroughly. Add flour, baking powder, salt, knead the dough and add nuts or chocolate pieces. Pour the dough into the pan, smooth it out and bake for 20-25 minutes. Check readiness with a wooden skewer - it should come out of the pie dry. Serve the blondies chilled with maple syrup and tea.
Sweden has its own kind of brownie called kladdkaka, which is unappetizing to us. Despite this, Swedish brownies turn out to be very tasty, and are prepared quickly and without major expenses.
Swedish brownie (kladdkaka)
Ingredients:
2 eggs
300 g sugar,
100 g butter,
2 tbsp. cocoa powder,
150 g flour,
a pinch of salt, vanilla extract - to taste.
Preparation:
Preheat the oven to 150ºC. Grease the baking dish with oil. Beat eggs with sugar, add flour, salt, vanilla, a teaspoon of water and beat. Melt the butter, mix with cocoa, add it to the dough and beat until you get a smooth, homogeneous dough. Pour the batter into the pan and bake for 35 minutes. Refrigerate before serving. The next day the brownie mash will taste even better.
And finally, some ideas for decorating brownies. Chocolate cake itself is quite sweet and aromatic, so regular sugar icing or jam is not the best way to decorate it. It is ideal to use cold cream for brownies with a refreshing taste and citrus aroma. For example, like this:
Orange cream
Ingredients:
1 orange,
100 g butter,
3 eggs
0.2 cups sugar,
vanilla - to taste.
Preparation:
Remove the zest from the orange and squeeze out the juice. Place the butter, cut into pieces, sugar, vanilla, zest into a saucepan, pour in the juice and heat over low heat until the sugar dissolves. Cool. Beat the eggs, add to the cream and place on the lowest heat, stirring constantly. Once the cream has thickened, remove from heat, cool and spread over brownies. Or refrigerate for 6-10 hours and serve in a separate bowl.
Lemon cream is made a little differently. It requires more attention, but it also turns out much more interesting and richer than orange.
Lemon cream
Ingredients:
3 eggs
150 g sugar,
50 g butter,
juice of 2-3 lemons,
zest of 1 lemon.
Preparation:
Juice lemons at room temperature (this will release more juice). In a metal container in a water bath, mix eggs, sugar and juice and keep on fire until thicken, stirring constantly to avoid lumps. Strain the cream through a sieve and add the zest and butter, cut into small pieces, stir until the butter dissolves and cool. Spread the cream over the brownie before it thickens.
Based on brownies, you can make an unusual holiday dish for the children's table - fruit “pizza”. Bake the brownies in a round pizza pan without removing them from the pan, spread with cream cheese or citrus cream, and place pieces of fruit and berries on top. The final touch is to melt the fruit jelly in the microwave, apply it to the fruit with a brush and put it in the refrigerator to harden.
Remember that brownies are very tricky. Prepare them in small portions and no more than 2 times a month. And once you’ve prepared it, invite your friends, brew some good tea and treat everyone. If suddenly your guests couldn't eat all the brownies, pack them in paper and freeze them. There will be a reason to get together again.

But first read Brownie recipe with photos!
You will need:
- dark chocolate 75% 200 gr
- butter 1 pack (180-200 g)
- nuts (any) 2 cups (cup volume 200 ml)
- sugar 1 cup
- vanilla sugar 16 g (2 small bags)
- premium wheat flour 4 tbsp. with a slide
- eggs 6 pcs
- salt 2 pinches
This quantity of products is designed for form size approximately 20 X 30 cm- it turns out 18 cakes, which store well in the refrigerator. So bake this big batch without any embarrassment; you can never have too many brownies.
Nuts can be any, I use walnuts, you can add peanuts or hazelnuts, in America they prefer to put pecans in Brownies. But the cakes taste great even without nuts! I'll tell you a secret, I prefer brownie without nuts. Nuts, it seems to me, are distracting and do not allow you to fully feel the very delicate structure of Brownie for which the whole world loves it.
The ingredients do not list baking powder, this is not a mistake. No baking powder is added to classic brownies., the absence of baking powder makes the consistency of this dessert a little moist and viscous - this is what distinguishes it from other chocolate delicacies. If you take an interest in the history of Brownie, you will find out that it was born in America as a result of an accidental mistake by a pastry chef who forgot to put baking powder in the dough. Oh, these coincidences! However, on the Internet you can find recipes with baking powder, in any case, the main thing is not to overcook the brownie in the oven so that its center remains a little undercooked.
Usually used for brownies dark chocolate with high cocoa content(at least 60%), but if children will eat the dessert, you can use milk chocolate.
Step-by-step photo recipe for making Brownie:
Chop the nuts into small pieces - place the nuts in a bag and crush with a rolling pin.
Roast the nuts over low heat, stir, making sure not to burn. It is enough if the nuts are warmed up well - touch them with your hands and, as soon as you feel that the nuts are hot, pour them into a separate bowl to cool.
Melt chocolate and butter. Many confectioners recommend using a water bath for this, but life has shown that this can be done without unnecessary movements. Simply place the butter and chocolate pieces in a small saucepan, place over low heat and stir continuously. Remove the pan from the heat periodically to prevent the mixture from overheating. Don't let it boil!
When the chocolate is almost melted and small pieces remain, you can turn off the heat; the mass will reach the desired state from the heat of the heated pan. Let the melted chocolate cool slightly before adding it to the batter.
Combine eggs with sugar, salt and vanilla sugar, beat until smooth. Do not be overzealous and do not beat the eggs until fluffy, brownies are not, 3-4 minutes with a mixer is enough.
Add sifted flour, stir.
Add melted chocolate and nuts. Just mix everything until smooth.
Transfer the finished mixture into the mold, covered with baking paper. If you don't have paper, grease the pan with butter and sprinkle with flour. Bake in a preheated oven at 170ºC for 20 minutes. Remember that It's better to underbake brownies than to overbake them. Everyone's oven is different, so keep an eye on your baking and as soon as the brownie is crusty on top but still moist inside (pierce it with a toothpick), feel free to remove it from the oven. Please note that this “big chocolate” will also finish baking on a hot baking sheet outside the oven.
This is what happened. Hooray! Cool brownies completely. and only then remove from the mold and cut into pieces. Yes, and don’t despair if you suddenly overbake the dessert (as a rule, this happens to those who bake Brownies for the first time) it will still be delicious! In addition, Brownie is especially good when cold, and before cutting, it is recommended to keep it in the refrigerator for 6 to 12 hours. After refrigeration, it will cut more smoothly, and even when overbaked, it will “dampen” a little and acquire the desired viscous consistency.
The original Brownies contained walnuts and apricot frosting and were drizzled with melted chocolate, so you can do the same with a cooled cake. The glaze is made from apricot jam (500 g jam + 50 ml water, stir and cook for 2 minutes). If you have homemade, grind it in a blender, boil it a little, cool and brush on the Brownie. But, as I wrote above, everything that except
very distracting. I think that the brownie is great even without nuts and without frosting, and it already has quite a lot of chocolate.
The easiest way to decorate is to sprinkle the cake with powdered sugar: put clean lace on the pie, sprinkle with powder, remove the lace - the design will remain on the pie.
We will then wash, dry, iron the lace, carefully fold it and store it in a bag for the next baking.
Brownie is a very high-calorie and nutritious product., because contains butter, nuts and chocolate. Chocolate contains a lot of magnesium and potassium, which are necessary for the functioning of the heart and muscles; it helps calm the nervous system, has a stimulating effect, increases vitality and improves mood. It makes it easier to cope with depression and stress. Quickly digestible carbohydrates and cocoa butter give the body a supply of energy. Some see the harm of chocolate in the fact that the theobromine it contains can cause addiction. In fact, the fears are groundless, since for addiction to occur, you need to eat about half a kilo of the product every day. However, everything is good in moderation, so don't get carried away and keep an eye on the children (!!!) - these mischievous people will gladly replace all regular meals with chocolate)))
Cooking brownies is really very simple. I admit, it was more difficult to photograph it - it turned out to be an extremely unphotogenic creature))) But the taste is amazing!
I imagined how my grandmother pronounces the word “brownie”))) I think she would definitely take this recipe into service - making a small chocolate bar from a large one using products available in any household is priceless)))
Brownie is perfectly stored in the refrigerator in a closed container, so you can extend the pleasure over several days))) It can be heated in the microwave - hot Brownie goes well with ice cream. Enjoy your tea!
