Every housewife tries to prepare pickled cucumbers for the winter. There are different recipes winter preparations, and canned cucumbers with onions is one of the most delicious recipes.

1. Cut the cucumbers into slices 7-10 mm thick. Add the onion to them and distribute tightly into the jars, adding pepper, dill and tarragon.
2. Then prepare a marinade from 1.5 liters of water, vinegar, salt, sugar and allspice. Pour the marinade over the vegetables and sterilize for 10-12 minutes at a temperature of 85-90 degrees.
3. Roll up the jars with sterilized lids, turn the lids down and wait until they cool completely. Store in a dark place.
Canned cucumbers with onions
This recipe does not involve adding oil to the dish, and vinegar is used in minimal quantities. Products:
- 3 kilograms of cucumbers,
- 250 grams of garlic and the same amount - onions,
- coarse table salt – 100 grams,
- 250 grams of sugar
- 150 grams of vinegar (six or nine percent).
A little advice:
— Choose cucumber varieties suitable for canning and do not use salad varieties. You can choose cucumbers that are slightly overgrown.
- Do not skimp on garlic for cooking; it will serve not only as a seasoning, but also as a good preservative.
Preparation:
1. Chop the cucumbers into small pieces of 0.5 cm or a little more.
2. Add onion, pre-cut into thin strips, and garlic, passed through a garlic press.
3. Mix all the vegetables in a large enamel or glassware and add sugar, vinegar and table salt to the resulting mixture. Leave in a cool place for 10-12 hours.
4. After this time, place the cucumbers in prepared jars (0.5 or 1 l), close them with lids and roll them up. How to prepare jars for canning: rinse thoroughly, put in the microwave for a couple of minutes.
Cucumbers with onions for the winter
Ingredients (calculated for 0.5 liter jar):
- 400 grams of cucumbers,
- 40 grams of onion,
- 10 g of greens (dill and parsley),
- hot red pepper pod,
- 20 g acetic acid (6%),
- 2 tablespoons vegetable oil,
- 2 peas of allspice,
- 5-6 grams of table salt
- 2 cloves of garlic.
How to cook:
1. Cucumbers must be thoroughly washed, trimmed on both sides and cut into thin slices, preferably their thickness should not exceed 1 cm.
2. Prepare the garlic by cutting it into 4 pieces.
3. Peel the onions, cut them into slices half a centimeter thick. Chop the parsley and dill.
4. Now you need to place all the cooked vegetables and herbs in an enamel bowl, add salt and acetic acid to the mixture, mix everything well.
5. Place in the bottom of previously prepared clean jars hot pepper and a couple of tablespoons of sunflower oil. Next, a mixture of vegetables is placed on top, the jars are covered with lids and sterilized at a temperature of 100 degrees for 11-12 minutes. Before preparing the salad, it is advisable to soak the cucumbers in cold water for a couple of hours, this will make them stronger. Then you need to rinse them with clean water.
Cucumbers can be cut in free form. Some people like it thicker, some like it thinner. Some with cubes, and some with circles. Size doesn't matter here.
I would advise cutting the onion thinner, because its task is to enrich the taste, that is, in essence it acts as a spice, although in general some people like onions in this salad even more than the cucumbers themselves.
Finely chop the greens. There should be quite a lot of it. If your dill has already died, you can chop the inflorescences that have not yet produced seeds.
Stir the vegetables and add all the ingredients for the marinade - sugar, salt, vinegar, vegetable oil and spices. There is no point in mixing them in a separate bowl, it would just be a waste of dirtying the bowls.
Mix everything well, close the lid and leave for half an hour. During this time, the cucumbers will give juice.
Next, put the pan on the stove, select low heat - about a third of the scale on the handle. Bring to a boil. We wait until the cucumbers begin to change color, stirring constantly so that they cook evenly.
Sterile jars should already be ready. Each housewife has her own way of sterilizing containers. Some people keep the jars in the oven, some boil them in a tank, some keep them under steam for 10 minutes. The lids also need to be boiled.
Place the salad in jars and immediately roll up. Turn it upside down. No need to wrap it up.

Mix it all, leave for thirty minutes until the vegetables give juice. Pour 2 tbsp into a large bowl. spoons of salt, black pepper, 4 tbsp. spoons of sugar, pour in 100 ml of vinegar. Add the rest of the infused cucumbers, stir well. Bring to a boil over low heat with little stirring. As soon as the fruits change their color slightly, remove from the heat, spread out, and completely fill with the appetizer. Make sure that the vegetables are completely covered with the marinade. The workpiece does not require sterilization.
“Raw” cucumber salad.
Wash 3 kg of cucumbers and chop into slices. Chop 200 g of onion into thin strips. Pass 255 g of garlic through a press. Mix everything, season with salt, black pepper, sugar, herbs and 155 ml of vinegar. Place in a cool place, leave for 10 hours, place in sterilized containers. Close the containers with screw or nylon caps. For better preservation, add sunflower oil.
Option with hot pepper.
