How to cook liver pancakes from chicken liver with carrots in a frying pan
Short grain rice, rinse and boil until done.
This recipe uses chicken liver, so cool the offal first. Remove ducts and films with a knife. Rinse the liver with running cold water, then cut into pieces.
The liver must be crushed to form a base for the dough. To do this, use a meat grinder or blender. In this case, the dough turns out liquid, and you will need to add a lot of flour.
To make the dough consistency thicker, use a potato masher to crush the liver. This is a rather unusual method, but if you want, try it. Cut off the ducts and films from the liver with a knife. The result is a fairly dense liver mass.
Place the boiled rice in a bowl with the liver mixture.
Grate the carrots on a fine grater, cut a small onion into cubes, and send to the liver.
Tip: liver pancakes with rice and carrots will turn out tastier if you first sauté the vegetables until soft, and only then add them to the liver mass.
Add one spoon of wheat flour and two spoons of semolina into the dough. Now add one small egg and mix everything thoroughly.
Since the dough contains semolina, it needs to sit for 15 minutes. To give the liver pancakes a touch of piquancy, add a finely chopped clove of garlic to the dough, as well as a mixture of peppers. Finally, add a pinch of sugar.
Heat a frying pan with a thick bottom, pour in vegetable oil. Using a tablespoon, scoop out the liver dough and pour it onto the heated surface of the frying pan. The pancakes are fried quickly, about three minutes on each side (over moderate heat).
Transfer the finished pancakes to a plate and let cool slightly.
Place the pancakes beautifully on a plate, garnish the dish with tomato slices, and sprinkle with chopped dill or green onions. The sauce for such pancakes can be either creamy or tomato. Serve buckwheat or mashed potatoes as a side dish.
