Hello, dear readers of the site! I often spoil my family with delicious yeast baked goods; I always make the dough myself, it’s not difficult at all. I recently discovered an interesting recipe for quick yeast dough with kefir, it rises very quickly, it doesn’t even take an hour. The pies it makes are airy, fluffy and very tasty.
The dough does not go stale for a long time, even the next day, after heating in the microwave, the pies taste and look as if they had just been taken out of the oven. This dough can be used to make pizza, pies with sweet and non-sweet fillings, cook in the oven or fry on the stove. I made meat pies in the oven, it turned out very tasty!
Ingredients for yeast dough with kefir:
- Kefir – 0.5 liters (you can use sour milk)
- Flour – 800-1000 gr. (how much dough will take)
- Quick dry yeast – 1 p. (11 g.)
- Eggs – 1 pc.
- Sugar – 1 tbsp.
- Vegetable oil – 2 tbsp.
- Salt – ¾ tsp. (or to taste)
- Homemade minced meat – 700 gr.
- Onion – 1 pc.
- Salt, pepper to taste
How to cook meat pies in the oven:
Dissolve dry yeast in a small amount of warm water, cover with cling film and leave for 10 minutes. In warm kefir (room temperature), stir the egg with salt and sugar, then add the appropriate yeast, mix a little, pour in the vegetable oil, add flour in portions, but do not overdo it, the dough should be soft and light.
Place the dough in a pan, cover with cling film or a lid and leave in a warm place until it increases in volume several times. My dough came out within 45 minutes.
Knead the risen dough, remove it from the bowl, form a sausage, divide it into small pieces. Lightly roll each piece in flour and shape into flat cakes using your hands or a rolling pin. We put a filling on each flatbread, this time I used meat. To prepare it, I minced pork, beef and onions, mixed everything and seasoned to taste.
We form the pies and place them on a greased baking sheet, seam side down (or bake in vegetable oil in a frying pan). Let the dough rest for about 15 minutes, during which time we preheat the oven to 180 degrees. Then you can brush the pies with an egg (or one yolk). I didn’t do this, just 10 minutes before the end of cooking (as soon as the pies started to brown) I took the baking sheet out of the oven and greased them with butter, then put them in the oven for another 10 minutes. Total cooking time is approximately 30 minutes.
Delicious plump pies with a variety of sweet and savory fillings are something that can bring the whole family together in the kitchen over aromatic tea. But many housewives believe that in order to prepare the dough for pies, they will have to spend a lot of time, and therefore they do not often pamper their family with this pastry.
In order not to spend the whole day fiddling around in the kitchen, you can use recipes for quick dough, which is kneaded with kefir. Even without yeast, it turns out soft and tender, and goes well with any filling.

Kefir pies without yeast with apples
Lush pies from kefir dough can be prepared without yeast. Since this dough does not need time to rise, such baked goods are prepared very quickly. And the recipe may well be classified in the “quickly prepared” category.

Yeast pies on yogurt with cabbage
Cabbage filling for pies is no less popular than apple filling. It is usually prepared from fresh or pickled white cabbage. Often eggs, mushrooms, minced meat, sausages and even prunes are added to the cabbage filling, which makes the taste of the finished products richer and more interesting.
For yeast kefir dough and cabbage filling you need to take:
- 250 ml kefir;
- 125 ml of vegetable oil for dough and 30 ml for frying;
- 50 g sugar;
- 50 ml water;
- 25 g dry yeast;
- 10 g salt;
- 5 g soda;
- 550 g flour;
- 700 g white cabbage;
- 150 g onions;
- 50 g tomato paste.
The preparation time will take 2-2.5 hours, most of which will have to be spent on kneading the dough.
The calorie content of pies with cabbage is 190.7 kcal/100 g.
Stages of work:
- You should start with a test. To do this, you need to dilute the yeast with half the sugar in warm water and set aside for 10 minutes;
- In a separate bowl, heat to a comfortable temperature so that a drop of liquid does not burn the back of your hand, kefir and vegetable oil;
- Combine the yeast that has begun to work and warm kefir with butter, add soda, salt and the rest of the sugar, mix everything thoroughly so that the mass becomes homogeneous;
- Gently stir the flour into the resulting liquid base, form a large ball of dough and send it to rise in a warm place for an hour and a half;
- While the dough is maturing, it’s time to start filling. The cabbage needs to be finely chopped, put in a saucepan, pour in a little water and put on fire to simmer;
- Peel the onion, cut into cubes and fry in vegetable oil until transparent, add tomato paste to it and simmer for a few minutes;
- When the cabbage is almost ready, add onion and tomato paste to it, stir and simmer everything together until done. Cool the finished filling;
- Form pies from the dough, put cabbage filling inside and bake in a preheated oven. At a temperature of 180 to 200 degrees, this will take 25-30 minutes.
Recipe for kefir pies with meat in the oven
Kefir pies with meat filling are a simple and quick bake that is perfect as an addition to tea or first courses. These pies are especially delicious hot and warm.
The following ingredients will be used for preparation:
- 220 ml kefir;
- 450-550 g flour;
- 40 ml vegetable oil;
- 10 g sugar;
- 5 g soda;
- 5 g salt;
- 1 chicken egg;
- 20 g sesame seeds;
- 400 g minced meat;
- 150-200 g onions;
- 30 g of greens (dill, parsley, cilantro);
- spices to taste.
It will take about 1.5 hours to prepare.
The calorie content of pies with meat filling is 238.4 kcal per 100 g of finished baked goods.
Baking sequence:
- Stir soda, vegetable oil, sugar, salt in warm kefir;
- Adding flour little by little, knead a soft dough that will resemble yeast in consistency;
- Wrap the dough in cling film and let it rest for 30 to 40 minutes;
- For the filling, mix minced meat (it is better to use a mixture of chicken and pork), onion cut into thin half rings, chopped herbs. Mix the filling well, add salt and pepper. If it turns out too thick, you can dilute it with cold water or kefir;
- Form pies from the rested dough, place them on a prepared baking sheet with the seams down, brush with beaten egg, sprinkle with sesame seeds and bake for about half an hour in a hot (200 degrees) oven.
Regardless of whether yeast or yeast-free dough is prepared for pies, kefir must be warm or at least at room temperature. Otherwise, the dough will not rise well in the oven.
When using a yeast-free version of the dough, you should strictly follow the recipe and not overdo it with soda, as it can give the finished baked goods an unpleasant taste.
It is worth remembering that tight and dense dough will also not rise well, so there is no need to overdo it with flour and kneading. The dough should be soft and tender.
The beautiful appearance of the pies and the appetizing golden brown crust depend on the sugar that is added to the dough, so even for unsweetened baked goods, when kneading the dough, you need to add at least one teaspoon of sugar.
You can get a beautiful shiny glossy crust for pies in the oven by brushing them with beaten egg, sweet water or the same kefir that was used to knead it.
Most often, baked pies are made from yeast dough. But try making kefir pies in the oven. Maybe they will become your favorite ones.

Secrets of making pies with kefir
In order for the dough to rise well in the oven, kefir should be at room temperature when kneading.
Don't add too much baking soda. Its excess worsens the taste of baked goods.

Kefir dough for pies in the oven
Break an egg into a deep bowl, add salt and sugar.
Whisk the mixture until bubbles appear and add sour cream.
Stir. Pour in the kefir and whisk again.
Add vegetable oil and stir.
Add flour, citric acid, soda.
The amount of flour depends on the thickness of sour cream and kefir, so add flour in parts, while kneading the dough until it resembles yeast in consistency. When the dough stops sticking too much to your hands, place it on a table sprinkled with flour and knead.
Let it sit for half an hour under a bowl. During this time it will become soft and pliable.
Egg and onion filling for pies
Boil the eggs for 10 minutes. Refrigerate. Peel off the shell. Chop them with a fork.
Add chopped green onions to them.
Add salt to the filling, mix and rub a little so that it does not crumble too much.
How to cook kefir pies in the oven
Divide the rested dough into pieces the size of a chicken egg. Roll them into balls. Cover with a towel to prevent them from crusting and start forming the pies.
Knead the bun with your hands, giving it the shape of a thick flat cake. Place the egg filling in the middle.
Pinch the edges well. You will get these pies.
Place them seam side down on an oiled baking sheet and brush with egg.
Place the kefir pies in the oven preheated to 200° and bake for about 30 minutes. As soon as the pies are browned, they can be removed from the oven.

Ingredients for yeast dough with kefir:
- White flour - 0.85-1 kg;
- Kefir of any fat content – 500 ml;
- Dry yeast – 11 g;
- Granulated sugar – 1 tbsp;
- Fresh egg – 1 pc.;
- Salt – 0.75 tsp;
- Sunflower oil – 2 tablespoons.
How to knead yeast dough for kefir pies:
Since we are using dry yeast, it needs to be “awakened”. To do this, dilute the yeast granules in a small amount of warm water. Stir the dough and place in a warm room for 10 minutes.
When the yeast rises like a cap, pour warmed kefir into the bowl for kneading the dough. Beat the egg into the dough, add granulated sugar and salt and mix with a whisk.
Add vegetable oil there (I added sunflower oil, but you can use any other), stir and add flour in small portions.
When the dough becomes stiff, continue kneading by hand. The density of the dough should be quite soft and elastic, and I do not recommend adding a lot of flour to it.
Place the formed ball of dough in a bowl dusted with flour, wrap it in film and place in a warm place to rise. It rises very quickly and increases in volume several times within 45-50 minutes.
Fermented milk products as a basis for the dough make it truly “fluffy” and tender. You can prepare such a product even without yeast. The best kefir dough recipes for pies are published below.
Modern housewives often do not have time for complex dough, which requires long standing and constant mixing. This recipe will allow you to prepare delicious pies quickly and easily. Ingredients: 1 tbsp. kefir, 3 tbsp. light flour, a large pinch of table salt, a standard packet of dry yeast, half a glass of refined butter, a small spoon of granulated sugar.
- The dairy product is heated in an enamel container. But it shouldn't get hot.
- Next, the liquid is sweetened, salted and combined with oil.
- Light premium flour is sifted into a separate bowl from a high distance and mixed with quick yeast.
- The bulk and liquid mass are combined.
- The resulting yeast dough on kefir should stop sticking to your fingers after kneading.
In a windless place, the base will sit for a little less than an hour under a fresh towel made from natural materials. Treats made from it are baked in the oven.
Without yeast
If the cook doesn’t want to bother with yeast, then he can do without it. The base for the pies will still turn out fluffy and tender. Ingredients: half a liter of low-fat kefir, 660-680 g of light flour, a pinch of baking soda, sand (sugar) and rock salt, a choice chicken egg, 3 large tablespoons of vegetable oil.
- First of all, sift the flour with all the dry ingredients, except sand, into a wide bowl. A recess is made inside the resulting slide. Carefully beat the egg into it and pour in all the liquid ingredients.
- All that remains is to add sand and start kneading. It is convenient to do this first with a wide spoon, and then with your hands.
- When the elastic soft mass stops sticking to your fingers, it is completely ready.
- There is no need to stand the kefir dough for pies without yeast near a heat source. You can immediately start filling future baked goods.
Dryish fillings, both sweet and salty, are best suited for this base.
Quick dough for kefir pies
Today there are many known quick versions of the test under discussion. This is one of the most successful among them. Ingredients: 590-620 g light flour, 290 ml low-fat kefir, 1 pc. chicken eggs, 1.5 tbsp. spoons of granulated sugar and half as much salt, a large pinch of soda, slaked with freshly squeezed lemon juice, 4 large spoons of vegetable oil.
- Flour is sifted from a high distance into a deep bowl with other dry ingredients. Again, there is no yeast among them.
- The liquid components are mixed separately.
- Both masses are connected.
- The dough should be kneaded until it stops sticking to your fingers.
- It will take 15-17 minutes to rest in a place without drafts.
After the specified time has passed, you can make delicious pies.
Airy butter dough
Donuts made from this dough will be especially tasty. But the base is suitable for any pies. Ingredients: 390-420 g light flour, 12 g vanilla sugar and the same amount of baking powder, 380 g thick fat kefir, 2 pcs. chicken eggs, a large spoon of any strong alcoholic drink, a pinch of fine salt, 3 large spoons of granulated sugar.
- First you need to work with the liquid components. Chicken eggs are beaten using a whisk with the gradual addition of sand. You need to continue the process until the mass is covered with bubbles and turns white.
- Next, alcohol and kefir are poured into the mixture.
- You need to salt the base, add baking powder and quicklime soda to it.
- After mixing the ingredients again, the airy, tender dough is completely ready.
You need to fry pies or donuts from this base in a large amount of oil.
Cooking without eggs
Before you start preparing the product in question, you will need to remove all the ingredients used from the refrigerator. They should come to room temperature. Ingredients: 75 ml of vegetable oil, 25 g of pressed fresh yeast, 190 ml of medium-fat kefir, 330-340 g of light flour, two large pinches of rock salt, a large spoon of granulated sugar.
- First, kefir and vegetable oil are combined. After light mixing, crumble yeast is poured into the ingredients. It is more convenient to measure the recommended amount using a special kitchen scale.
- The mass is sweetened and salted.
- You need to stir the ingredients until the yeast is completely dissolved.
- The resulting mixture is left for a short time until it is covered with bubbles and rises slightly.
- The mass is poured into a deep wide bowl. Oxygen-enriched flour is poured there.
- After thoroughly kneading, the dough is left for 35-45 minutes in a place without drafts.
When the base has risen well, it is kneaded again. Then you can begin to form future baked goods.
With the addition of sour cream
This version of the baking base can be called universal. It is suitable for baking treats in the oven and for frying in a frying pan. Ingredients: half a liter of full-fat kefir, 2 pcs. large eggs, 720-740 g of light wheat flour, 2 large spoons each with sour cream and vegetable oil, a large spoon of sand (sugar), a small spoon of baking soda and table salt.
- In cold kefir, baking soda is quenched. After a couple of minutes of infusion, the resulting mass will foam and you can continue to work with it.
- All that remains is to salt the dairy product and add all the remaining ingredients to it. The flour is sifted into the mixture last.
- First, you should work with the dough with a spoon, and then with your hands on a cutting surface.
- There is no need to infuse the base. You are allowed to immediately start making pies.
Small products are cut out of the rolled out mass, and the selected filling is placed in the middle of each of them. It can be both sweet and salty.
