And if the recipe is also simple, then such a delicacy has no price at all. Our family loves shortbread pies, and even though in such cases I only have time to clean up the crumbs after my son, I nevertheless pamper my beloved men with such fragrant homemade pastries.
To bake shortbread pie with raspberries, you don’t have to fuss with it for a long time - the dough recipe is simple, and there are no problems at all with the filling, everything takes about an hour.
Initially, melt 100 grams of margarine (ideally it should be butter, but it wasn’t in the refrigerator at the time of baking - we had to replace it) - the rest will be used to prepare shortbread crumbs. In principle, this pie also turns out very tasty with margarine. Pour liquid margarine into a deep container, add sugar to taste and a chicken egg, beat everything with a whisk or mixer - I use the second method.
Gradually add flour, salt and finally soda slaked with vinegar.
The result is a thick, but soft and pliable dough.
I lined it on the bottom of a ceramic baking dish, having previously covered it with parchment paper.
We lay out fresh raspberries, sprinkle with sugar - the amount depends on your taste.
In order to form the top layer of raspberry shortbread pie, prepare the crumbs. To do this, I put 1.5 cups of flour in a deep bowl, add 150 grams of margarine, cut into medium-sized pieces, you can add a little sugar.
Rub all the ingredients in your palms to form sandy crumbs.

- Add sifted flour and baking powder. Beat the dough for about one minute.
- Half of the dough is poured into an oiled container.
- Place washed berries on top of it. They must be placed at an equal distance from each other. This allows the dough to bake between them and prevents juices from forming.
- Pour the second half of the dough over the berries so that the raspberries are completely hidden.
- Place the pan in the oven, preheated to 180 degrees, for 25 minutes.
- The oven must not be opened during cooking. After the pie is browned, turn off the fire. Leave the baked goods in the oven for another 20 minutes.
- The cooled charlotte is sprinkled with powdered sugar and decorated as desired.
Today you can buy frozen raspberries in almost any supermarket. This is the best option when there are no fresh berries. However, there are concerns that such berries will not retain their shape after defrosting and will release a lot of liquid. To prevent this from happening, take the raspberries out of the freezer and shake them in a container. This way the berries are separated from each other and the excess ice disappears. Having removed the “snow”, they begin to prepare the pie.

- 100 g sugar;
- a glass of raspberries.
Preparation:
- Melt the butter in the microwave.
- Beat the egg with sugar. Mix with cooled oil.
- All ingredients are thoroughly whisked until smooth.
- Flour, salt and baking powder are gradually added to the mixture. The result is a soft dough.
- The mold is greased with oil and covered with parchment paper.
- The dough is evenly distributed over the bottom of the mold and baked in the oven for 10-15 minutes at 180 degrees.

- half a glass of sour cream;
- 150 g butter;
- a teaspoon of baking powder;
- half a glass of sugar;
- two glasses of flour.
For filling and filling you will need:
- one egg;
- a glass of sour cream;
- a glass of sugar;
- two tablespoons of flour;
- 350 g raspberries (fresh or frozen).
Step by step recipe:
- To prepare the dough, combine sugar and sour cream.
- Melt the butter in the microwave and add it to the sugar-sour cream mixture when it has cooled.

- a glass of raspberries;
- 0.5 cups sugar;

- Remove the dough from the freezer and let it rest at room temperature for 15-20 minutes.
- Cut off the required amount of the layer and roll it out lightly with some extra on the sides.
- The dough is covered with a greased form.
- The raspberries are washed and placed on top, then sprinkled with a layer of sugar. Too many berries should not be placed on the dough, otherwise they will produce abundant juice and it will flow over the sides of the mold.
- Place strips of puff pastry on top of the raspberries and decorate them to your liking.
- Bake the dessert for 30 minutes at a temperature of 200-220 degrees.

To prepare it you will need:
- two glasses of flour;
- 200 ml natural yogurt;

- 1.5 teaspoons baking powder;

- 120 ml vegetable oil;
- 2 g salt and 5 g vanillin;
- 200 g raspberries.
Prepare the pie as follows:
- Beat eggs with sugar.
- Pour in the yogurt, add vanillin and salt, and beat again.
- The sifted flour is added together with baking powder in small portions, constantly stirring the mixture.
- Pour in vegetable oil and mix.
- The dough is transferred to a greased form, and berries are placed on top.
- The dessert is baked for a little more than half an hour at a temperature of 180 degrees.
Using the same principle, a raspberry pie is prepared using sour cream, replacing yogurt with it. Along with raspberries, some housewives use cherries, black currants, and strawberries.
I suggest you make a delicious raspberry shortbread pie. This pie will be a great addition to a cup of tea or coffee. Raspberries for the pie must be dry: if you wash them, they will give too much juice and the pie may not bake. In the ingredients I indicated 1.5 cups of raspberries, but it’s better to take 2, I just couldn’t collect the required amount due to the wet weather.

For shortcrust pastry, sift flour into a bowl, add sugar and butter, rub everything well.
Add the egg to the dry mixture and mix again.
Gather the dough into a ball. The dough turns out very plastic.

Beat a chicken egg into the butter and sprinkle sugar on top. We will use the above indicated amount, if you like it sweeter, you can add more.
Whisk all this until a homogeneous consistency is obtained.
Then sift flour, baking powder and salt into it, mix it all thoroughly.
If you did everything correctly, then you will get an excellent pliable and soft dough.
We will immediately distribute it evenly onto a greased baking sheet.
It’s time to bake our base; 15 minutes will be enough, provided that you turn on your oven at 180 degrees.
In the meantime, make crumbs. Mix flour, sugar and a piece of butter cut into small cubes.
Then rub this mixture with your hands until it looks like sand.
