I don’t like Irga in its original form, but as a filling for a pie - why not, especially when in winter you want to pamper yourself with the tastes of summer. What could be better than berry pie on a dark December evening? I froze the irga for this occasion in small portion containers, and after defrosting, this berry behaves very diligently - it does not ferment, like most berries from store bags.
Let me make a reservation right away that the ingredients for making shortcrust pastry are indicated for a simple open pie, without a braided decoration on top. If you want the pie to be elegant, take a third more ingredients, i.e. multiply by 1.3.
So, we will need the products shown in the photo below. Starch may also be useful to you.
Mix the dough. To do this, sift the flour into a bowl,
add salt, sugar in the amount of 80 g, as well as margarine or butter. Remove the latter from the refrigerator in advance, because it should be softened, that is, at room temperature.
We carefully grind all these components with our hands until they become crumbs. In my case, it turned out a little wrong, because I added a little more margarine than usual, but in general it should be just crumbs.
Add the egg yolk and water and again work with your hands to knead the shortbread dough.
This is what we end up with - a soft, non-sticky dough.
We put it in the refrigerator for 1 hour - during this time the butter will harden, and the dough will accordingly become denser and easier to work with.
After defrosting, sprinkle the irga with the remaining sugar (20 g - 1 tbsp) and mix. To be on the safe side, you can add 1 tsp to the berry. starch so that our filling does not flow, but I don’t see any particular need for this, as is the case, for example, with blueberries. The irga does not become soggy and the juice does not spill over the sides.
After 1 hour, take the dough out of the refrigerator and roll it out with a rolling pin into a layer approximately 0.3 cm thick.
Using a rolling pin, transfer the dough into the mold.
Where necessary, press along the sides, remove excess edges by rolling them along the wall with a rolling pin.
We often prick the bottom with a fork so that the cake does not swell from below.
Place our filling on the dough and smooth it out. We make the sides a little lower to make it easier to attach the decoration.
Using a curly knife, cut wavy strips from the remaining dough.
We place them on our pie in the form of a braid - on the first intersecting strip we put a strip of dough on top, on the second from the bottom, on the third from the top, etc., until we fill the entire surface of the pie.
Place the pie in the oven, preheated to 180 degrees, for 20-30 minutes.
Take it out, let it cool a little and remove it from the mold. It will not be difficult to get it out with a spatula - it comes off the walls perfectly, so there is no need to lubricate the mold.
We serve our sweet treat to the table.

Add eggs to softened butter. Add salt and granulated sugar. Mix all ingredients thoroughly. Sift all types of flour through a sieve and transfer to the butter-egg mixture. Add baking powder and bran there. The dough will be quite soft. It should completely lag behind the palms. Wrap it in plastic and put it in the refrigerator for half an hour.
Prepare the filling: beat 2 eggs, add sour cream, a little flour and granulated sugar.
Transfer the cooled dough into the mold. It is not necessary to roll it out; you can simply smooth it out with your hands. Form the sides of the future pie. Add the berries and fill with the prepared filling.
This pie must be baked in an oven heated to 190 degrees. After half an hour, reduce the temperature to 180 degrees and cook for another 15 minutes. After the dessert has cooled, cut it into pieces and serve.

Sift the flour and add baking powder. Grind it with butter. As a result, you should end up with fine crumbs. Mix the butter crumbs with the egg, which must first be beaten with sugar. Mix all ingredients thoroughly and knead the dough. Place it in a high-sided pan lined with paper. Place in the refrigerator for half an hour.
Using a mixer, mix cottage cheese, semolina, vanillin, sugar, sour cream and eggs. The result should be a homogeneous smooth mass. Place the prepared mass on the dough and place in the oven, heated to 180 degrees. Cook for 20 minutes.
Lightly sprinkle the irgu with sugar and starch. Remove the pie from the oven and place the berries in it. Place the pie back in the oven and bake for another 25 minutes. Let the finished dessert stand for about 20 minutes. After this, it can be served to the table.
