How to work with a knife. Knife
If you are new to the kitchen, learning how to use kitchen knives and knowing how to choose the best knife for a particular purpose is essential to improving your cooking skills. After reading this article, you will learn how to choose the right knife, handle it, and keep your kitchen knives in order.
If you are not interested in handling kitchen knives, but, for example, in learning how to throw a knife, you can refer to other wikiHow articles.
Steps
Part 1
Choosing the right knife- There is no "best knife" or perfect kitchen knife. If you are choosing a set of kitchen knives, buy one high quality knife, the rest of the knives may be cheaper and not as good quality. This is the main knife you will use most often; It is best if the blade is wedge-shaped, made of stainless steel or other corrosion-resistant material, and about 13 cm (5 inches) in length.
-
Use a basic knife or chef's knife for chopping, chopping, and dicing. Such knives are often referred to simply as “kitchen knives” and have durable, reliable blades. To prepare many dishes, just such a knife is enough; it is suitable for slicing fruit into thin slices, crushing garlic cloves, chopping onions and the like.
- Kitchen knives are made from ceramic, steel or polycarbonate, and the shape and appearance of the knives can vary. Typically, Western-style knives have a relatively wide blade and are designed primarily for chopping and chopping, while Japanese-style knives have narrower blades and are made from stronger grades of steel.
-
When peeling fruits and vegetables, a special peeling knife is used. These knives are also often used in the kitchen; they are usually quite small and are used for peeling and cutting fruit, but not for chopping or other similar operations.
- These knives are especially good for peeling fresh fruits, cutting apples, pears, and stone fruits.
-
Cut into slices using a bread knife. These serrated blade knives are especially good for slicing bread. There are few things more annoying than slicing a soft, springy loaf of freshly baked bread with a regular kitchen knife; At the same time, the bread is poorly cut, crumbles badly, and so on. The serrated blade of a bread knife is also well suited for slicing fried meats and other foods, so this knife is often useful.
Choose well-balanced knives with the right weight for you. In a good kitchen knife, comfortable weight and the correct weight balance between handle and blade are important. The best knives are made from solid steel plate and their weight is well balanced. Check the weight balance by placing the knife on your finger with the handle close to where it meets the blade. The comfort of the handle is also important so that your hand fits tightly around it when working.
Part 2
Using kitchen knivesLearn to use a knife correctly. Hold a kitchen knife by the handle as if you were about to shake someone's hand. In this case, the index finger should be located on the back (flat) side of the blade, and the remaining fingers should tightly clasp the handle near the blade. The knife should be parallel to your body. This is the main grip used for a kitchen knife and provides maximum control and precision when working. Because your fingers are close to the blade, you have good control over its movements, cutting food where you want.
- When you hold the knife in your hand, the tip of the blade should be pointing down and away from you throughout the entire operation. Kitchen knives can be extremely sharp, so be careful when using them.
- Many inexperienced chefs, when handling a kitchen knife, use the so-called “hammer grip,” in which all fingers cover the handle of the knife (that is, the index finger is not placed on the blade), and the blade of the knife is not located down, but at a right angle to the body. Try not to act in such a way as to resemble a maniac with a knife at the ready from some horror film.
-
Learn how to chop properly. Shredding, or chopping, is one of the main operations with a kitchen knife. While there are several different styles of shredding, there are a few basic techniques that beginners should have a firm grasp on. First of all, keeping your fingers away from the bottom edge of the blade is a very important safety precaution.
- In the apex method, the tip of the knife blade touches the cutting board at all times. Using this point as a reference, you raise and lower the handle, and with it the blade of the knife, sharply pressing it into the product being cut.
- In the wrist rest method, the cutting board is constantly touched by an area of the blade adjacent to the handle near where your fingers are located; the blade makes pendulum movements up and down. This method is usually used when chopping onions and some other vegetables.
- Never press too hard on the knife so that it cuts through the vegetables and into the cutting board. This makes no sense, is unsafe, and dulls the knife blade.
-
Learn how to properly feed food under the blade. Holding the knife with your dominant hand, bring the fingers of your other hand together to form a beak. Practice on carrots or onions, holding them on top while chopping. Use the fingertips of your feeding hand to touch the flat side surface of the blade, making cutting movements with the knife. Gradually feed the product under the knife using your beak fingers.
- Many experienced chefs like to boast about the speed of shredding. This show looks very dangerous and amazes the imagination. Although it uses the "proper" shredding method, the close proximity of the serving hand's fingers to the sharp blade seems intimidating to newbies. This method takes a little practice, but is actually safer than keeping your fingers away from the blade and not touching it.
-
Learn to cut off unnecessary things. Trying to cut a product into oblong or rounded pieces slows down the work and can be dangerous, so in most cases, vegetables or fruits are first cut into slices of the correct shape with flat edges, which are then easy to finally chop, chop, and so on. In this case, the “tops and roots” are usually cut off, that is, the upper and lower edges, which are often thin and dried out.
- Potatoes, tomatoes, onions and other round vegetables have their “tops and roots” removed before cutting. Holding the vegetable or fruit firmly by one side, cut off any excess sections and discard them. However, some vegetables, such as tomatoes, are often cut in half and then trimmed off the excess from each half.
-
Cut vegetables into small cubes of approximately the same size. In randomly chopped vegetables, large pieces are found, while when chopping into cubes, homogeneous pieces with an area of several centimeters are obtained. With this type of chopping, you can cut the vegetable or fruit lengthwise several times, and then cut it into small cubes perpendicular to these longitudinal cuts.
- Cut the vegetables first in one direction at equal intervals, then chop it into small cubes in a second direction perpendicular to the first.
-
To dissolve vegetables, chop them. Chopping involves chopping small fruits and vegetables so finely that when they are subsequently cooked, they practically dissolve in the pan or pan. As a rule, garlic is crushed this way. To chop any product, first cut it into cubes, and then run a knife back and forth over the pile of these cubes several times, cutting them into as small pieces as possible. As a result, you will get a homogeneous mass that is much more dispersed than the original cubes, approaching the consistency of a paste.
-
Chop leaves and other greens. This process involves cutting leaves and fresh herbs into uniform, small pieces, and is often used in the final stages of preparing a variety of soups, salads, stir-fries, and spaghetti containing fresh herbs. For example, dill, parsley, spinach and basil are often chopped. It's a pretty simple process.
- To chop greens, roll the leaves of the plants tightly together and cut them with a knife at regular intervals. As a result, you will get a mass of homogeneous small fragments with which you can decorate the dish before serving.
-
Learn to cut vegetables into thin strips. This is one of the most effective methods of cutting vegetables to decorate a dish or subsequently boil and fry them. If you're looking to improve, learn how to cut vegetables into thin strips. Carrots, beets, cucumbers and many root vegetables are suitable for this. It is important that the vegetables you cut are relatively firm; You probably won't be able to cut a tomato this way.
- Cut the product into slices about 3-4 mm thick of equal length, then stack them one on top of the other and cut into thin strips. The thickness of the straw should be approximately the same as the thickness of your knife blade.
Part 3
Knife storageAfter use, wash knives with warm water and dishwashing detergent. Immediately after use, wipe the knife with a clean towel to remove any food residue or other dirt from the blade. The longer the knife remains wet and dirty, the faster its blade will become unusable. Knives should be clean and dry between uses.
- Wash each knife individually using soapy water, being careful. Don't dump all your knives at once into the bottom of a kitchen sink filled with water so you don't have to fish them out later. Knives should not be in water for too long, becoming soaked with it.
- Do not wash knives in a dishwasher, especially if the handle of the knives is made of wood or other material that absorbs moisture well.
Buy a utility kitchen knife. If you have a small kitchen and don't have room for a large set of knives, make a utility knife your main tool. It is well suited for shredding, thin slicing and many other purposes; Being of high quality, such a knife will turn into the most useful and versatile item in your kitchen. Even if your other knives are cheap and dull, a good utility knife will always help you out.
Good day, Soldiers! As they say: “No matter how much you ram the bucket, you will have to carry it out.” To paraphrase this folk wisdom;) we can say the following. It's time to lay out the groundwork knife technician and not only because there is clearly increased interest in this sport(?) among the people in our time.
But also for the reason that the ability to act correctly lays the professional foundation of martial art and helps to reach a completely different level of understanding of it, which consists, among other things, in conscious training.
Why is it necessary to study such a specific work: after all, not everyone is going to carry it with them, much less use it? But here we can remember those who seriously study sword fighting: they are not interested in the applied aspect at all, but who is running around the streets with swords these days? It's just that this kind of work puts a number of critical skills needed in unarmed combat. The integral structure of the body is built - it begins to move, lining up in an optimal way to ensure maximum effort. Fine coordination skills are laid and, in particular, the correct work of the fingers is established, when they help, and quite significantly, to speed up hand movements in general, which can be successfully used both in attacks and defenses: without knife, it would be difficult to understand and master.
It also helps to expand the technical arsenal of hand-to-hand combat, since when working with him, a person very often, by analogy, begins to transfer techniques of working with a knife to unarmed combat, where they are consolidated: that is, we can already talk about the beginning of the creative process.
That is, no matter how much a person “excuses” himself, the ability to master it saves literally months of training, “several times” speeding up the development of the necessary material. And really, we can say that knife and is the very basis of all combat systems of antiquity.
Why antiquities? Because only in the systems that came from that time, there was no clear division into unarmed or armed combat, since the whole thing was one and moreover, armed combat somewhat prevailed over unarmed combat. And in fact, what is the point in spending a long time preparing for battle without the use of special equipment, if, for example, knife, the chances of survival in battle immediately increase tens, if not hundreds, times?
In our time, armed combat and unarmed combat have taken different paths and are considered as separate disciplines, practically unrelated to each other, and if they try to link them together, they try to transfer the already mastered skills of unarmed combat to completely unknown ones. moments of wielding a weapon, which leads to somewhat strange results. Someone will give you a fist blow and take it in your hand knife and he hits in exactly the same way, completely ignoring the nuances that are inherent in knife techniques! Hence, in the East, there are such strange basic knife strikes that a normal person would never study, only under the duress of some canons of fighting schools.
So you will strike them in such a “dead” manner, and even so sweepingly? And in Japan they exist because here they go from unarmed to armed training.” Judo, karate, aikido: these systems are trained to work against an armed person who is like “and will work in such an incomprehensible manner” :)
But the ineffectiveness of the mastered arsenal of counteraction, because the attacker is not working “as it should”, is the first thing that a person trained according to standard training schemes will encounter. And in the best case, they cut him thoroughly, as a result of which, after such a battle, the following options are possible: the person, if he survived, gives up studying; the person ignores and continues to train as usual (“closes his eyes” and pretends that everything is normal); the individual reviews and adjusts his or her activities to “fit in.”
So, knowing the basics and being able to use them is extremely important for a person. It is impossible to effectively defend against knife without knowing fencing techniques. In fact, how can one calculate the actions of an enemy who works in the manner of “scheduling”, if any of his actions is a “secret with seven seals”?
Where should one begin the art of countering an enemy armed with a piercing and cutting object? Attacking technique is always studied first and when working against knife this is no exception.
This basic “knife maker” course includes, in fact, a coordination base, movements, various methods of changing grips, basic knife strikes, auxiliary punches and kicks. Well, the very first thing is the simplest getting used to the knife: its appearance, weight, temperature, smell, the threat of the blade, and so on.
At first, you need to psychologically get used to knife, get used to it so much that its presence in the hand does not interfere, moreover, they forget about it. To do this, it is recommended to hold it in your hand in everyday life, to do some household work without letting it out of your hands and somewhere, even using it, for example, while eating or cutting meat. This is how you recognize the feeling of a knife entering a body, even if it is chicken or lamb - meat is meat. Also, after hanging an object, not on purpose, but simply passing by, poke it with a knife to see how convenient it is in your hand, find out if there are any unpleasant sensations in the hand from blows, which signals an unsuccessful grip.
During training, to practice blows and cuts, it is better to make a special simulator. I don’t recommend working on living trees - life must be respected in any form, the tree is even more defenseless: better, hang up some kind of log. Practice somersaults and rolls, strikes and unbalances, work in the air and with a partner - the more variety, the better and faster the corresponding skill will be developed: the skill of feeling a knife, the skill of using it, and not just for something specific, but in general.
Slowly, some experience, some knowledge and skills will appear. All the time, working “in a circle” with the same exercises in training and in everyday life, the student will do them at a higher level each time, due to growing personal experience. In addition, you will develop the skill of working “for yourself”, as it is convenient for the practitioner, based on his constitution and physical capabilities.
The experience gained in the future, so that there is no stagnation in progress and the technique grows all the time, will develop and improve in various diverse tasks: one on one, one against a group, on the ground, etc.
Well, in parallel, purely specific work is going on, for example, coordination. It is necessary for many reasons, if only because it will be easier for a person to navigate the existing sections of knife fighting. Look how many of them have divorced: you can’t even count them right away! And at first glance it seems to a person that they are all completely different, but this is only “at first glance”. No matter what they do with weapons, no matter how the fighters move, and no matter what techniques of defense and attack they practice, all the same, the basis of this whole thing is the same and its name is movement according to universal patterns.
Yes, yes, I have already mentioned these universal motor schemes many times, but what can I do: I really like them;) I like the time savings, the creative process when working on them, and the constantly opening prospects in their use. So, I highly recommend starting to study the art of combat with them, with coordination development!
There seem to be enough of these schemes; The primary skills of applied work with a knife should begin to be mastered by movements along the eight-petalled figure, which is located directly in front of the performer, with the center located approximately at the level of the solar plexus. Here is the corresponding video (I respect this citizen!)
The video, of course, weighs well and lasts almost fifteen minutes, but it describes in detail coordination work and various subtleties, lack of knowledge of which greatly reduces the effectiveness of combat work knife. When working with a knife, this figure can be modified in space, lengthened or shortened, both in length and width, and also bent behind the performer’s back or towards the enemy, as a result of which absolutely any blows are born knife and types of protection. A well-developed coordination body, the ability to move in space, as well as well-developed manners of releasing force such as “whip” or something else, allow us to establish a base, the level of which will be unattainable for standard training methods.
By the way, we first learn any physical exercise with our left hand, so the time for learning is reduced several times. As a percentage, approximately 65-70% for the left hand and 35-30% for the right. In terms of time, the training lasts approximately 45-60 minutes.
The knife grips are standard, there is nothing new here: straight, reverse, diagonal. There is no point in arguing about which type of grip is better - each is good for its own situation and by preferring one to the detriment of another, we risk being defeated and, moreover, we will never learn the correct blows with a hand without a weapon. Once you have mastered them, you can also learn non-standard grips so as not to be caught off guard if your opponent uses them. The work itself knife can be either linear (with strong extensions of the petals towards the enemy) or circular. The line work resembles the manner of a fencer, and the figures that the knife draws resemble various geometric shapes. This style of fighting can be used with a small number of enemies, because... it does not have the ability to quickly adjust during the battle. Again, a lot of idle movements and standard movements - only a forward thrust, a backward movement mainly as a defense. Those who work in this style always disguise or distract the enemy in order to deliver the final blow. The advantage of this manner is the ease of preparing a person.
The circular manner is a manner of continuous movement, painting, reminiscent of a figure eight, a living figure eight - constantly changing its size. Here attack and defense merge into one. The movements easily flow around the enemy's limbs, conducting standard defenses and creating a striking sphere. The main striking zone here is even closer to the performer’s body.
It is necessary to be able to work in two manners when working “on the petals of a figure.”
A well-trained person can easily work at a speed of 5-8 beats per second, and in addition to this, he must be able to move in the planned direction and hit with his limbs. But here it should be noted that the goal is not in the number of blows delivered per unit of time, which are often delivered senselessly, without any thought at all into the process, but in developing the ability to work outside the box knife, be able to use it to carry out absolutely any kind of techniques, and also be able to build a “bridge” from actions with a knife to actions without a knife, but, nevertheless, based on it.
Having developed basic coordination movements, you can begin to build your system of work on its basis and begin to work out the physical component so that the movements are strong, and here I want to give several such exercises that help to form a strong vector of the blow (when stabbing with a knife) and trajectory (this is when circular work).
Straight path development. The partner folds his hands with his palms in front of him, with a knife between them. The person developing the trajectory takes the knife by the handle and slowly moves the knife back and forth. The force of the release can be developed by pressing the palms together forcefully. You can make a special simulator consisting of two planks and fastened with something, but in such a way that a blade can be inserted between them. We strengthen it as required by this or that situation and begin to work.
Developing knife grip strength by pulling. Taking an iron model of knives in each hand with a direct or reverse grip, try to pull yourself up or at least hang on the horizontal bar.
Developing the power to grip knives by moving them across the floor. With a knife in each hand, we take a position similar to before push-ups - pointing the tips into the surface. Perform a variety of movements and push-ups. You can change the emphasis from the tips to the blades themselves.
If training takes place in an open space, you can also develop trajectory strength in this way. Lying on the ground, on our stomach, we stretch our arm forward and stick a knife into the ground and, as it were, pull ourselves up to it, then we stick another knife and pull ourselves up to it and in such a cunning :) way we crawl along the ground.
To develop the skill of constantly feeling strength in your hand, the ability not to lose it, when changing positions in battle, sticking exercises are practiced, the essence of which is that a person rests a blunt model of a knife or a short stick on the partner’s body, and he begins to move away and change his position. Pressure can be released through any part of the weapon. It is necessary to ensure that the power that is taken from the earth is constantly poured into the partner without clamps or interruptions. The skill is developed well and the necessary feeling appears in the hands quite quickly.
Increasing the power of a knife strike. A person practicing with a knife in his hand stands in a fighting stance. The knife has a scabbard. The partner takes the knife by the blade. The practitioner begins to imitate a variety of blows, while the partner resists the movement of the knife. It takes a little work with each other, but then everything goes very well. This exercise cannot be practiced alone, only partially, using the methods described above.
Speed increase. In principle, speed will be developed in previous exercises, but you can increase the effect if you work through the rubber for speed. To do this, you need to attach a rubber band to the knife and imitate combat movements. It was also discussed how to increase speed.
Let's move on. Also, the basic training for mastering work with a knife includes: the manner of hand movement, finger interceptions, movements, auxiliary strikes using a knife, as well as auxiliary strikes with an unarmed hand and legs.
A little has already been said about contact control and intuitive work in the article dedicated to. There was a little talk about how to twist a knife (by the way, very soon 3D animated training videos will appear on my blog, so under no circumstances miss the unique material: subscribe to updates updates by email).
We will definitely talk about auxiliary strikes with an armed hand, knockouts and self-tapping screws in the future; finger grips of a knife are based on manipulations with a pen, which any office worker can do, but now I would like to focus on the intuitive development of protection. Such training is often ignored (I don’t know, but how it is now: the situation seems to have changed somewhat), but they have their own logic. The partner is an attacker, works without clamps, as it requires the body, taking into account the current situation and inventively, to touch the person. The defender needs only one thing - to prevent contact if possible and to make sure that the attacker loses the knife or cannot use it. As a result, the defender begins to work intuitively, escaping from the pain that the weapon model causes, the “” itself stops, as a result of which emerging battle situations begin to be resolved by the subconscious. Of course, this work is still dirty, not yet polished, but in conditioned battles, slow battles, situational battles, these created situations must be worked out. And, since they are fundamentally different from the contrived ones, from what is taught in the halls, it is impossible to carry out any memorized patterns of response actions, but high adaptability and speed are required, along with the developed ability to instantly perform the required technical element.
Having studied these five points, you can move on to polishing them, but first, in static conditions: not in motion, but in certain situations, for example, simulating a threat knife. Then there is work at slow speeds and fast ones. Alternation is necessary so that the body positions taken in fights at slow speed correspond to the positions in high-speed fights. This is precisely the point that many people miss, as a result of which the technology and dynamics developed here and there turn out to be different, and this leads to the inoperability of the system in street situations. A striking example of this is the Kadochnikov school, where they do not know how to work at speed, and as a result they lose.
When working in pairs, it is necessary to use a variety of layouts knives- wooden, iron, sharp, blunt. So the defender will have to constantly adapt to the knives, and “not sleep” during training. A little pain is also needed - this is the only way to shake the body and activate its instinct of protection. I especially want to focus on iron mock-ups of knives. These are just mock-ups, but they look impressive, and a missed blow is very painful, so the practitioner begins to work more conscientiously.
And only after undergoing initial training in the possession knife and having acquired primary skills, you can move on to the art of counteracting a knife.
Knife Fighting Basics
Supporting actions
Of the auxiliary actions, only kicks contribute to knife fighting. First of all, I recommend a jump that is light, free and fast (see the section “Kicks”).
In one lightning-quick movement they jumped up and broke the enemy's shin or knee. These are the two main and most effective auxiliary strikes.
Grip and interceptions
The grip of the knife is simply simple: three fingers press the handle to the heel of the palm, two fingers act as guides.
There are only two varieties here: direct and reverse grip.
Straight grip - when the tip of the blade looks up from your thumb (Fig. 22).
Rice. 22. Straight knife grip
In reverse, the point is directed downward from the little finger (Fig. 23).
Rice. 23. Reverse knife grip
Changing the grip of a knife in one hand is called interception. This action must be truly learned and only then used in real combat. Accordingly, there are also two interceptions: direct and reverse, depending on the position to which the blade is moved in relation to your fingers (Fig. 24, 25).
Rice. 24. Interception from direct to reverse grip
Rice. 25. Interception from a reverse grip to a straight grip
Changing the hand holding the knife is also often called interception. If we use this term, there are also two interceptions here: direct, when the knife passes from hand to hand without changing the orientation of the blade (Fig. 26), and reverse, when it turns 180° (Fig. 27).
Rice. 26. Direct interception from hand to hand
Rice. 27. Reverse interception from hand to hand
Everything else, the coolest knife juggling, is the songs and dances of the peoples of the North. Posturing. I can perform the most spectacular tricks with a knife and that is why I know that in real conditions this does not work. In combat, you only need quick, confident interceptions of weapons in one hand and when changing hands. The handle is still fixed with three fingers, and two fingers hold the blade.
Exercises
There are also two of them.
First exercise: vertical figure eight with forward and reverse grip. Performed in four counts: one, two, three, four - the number “eight” (Fig. 28, 29).
Rice. 28. Performing a vertical figure eight with a straight grip
Rice. 29. Performing a vertical figure eight with a reverse grip
The blade should be pointed forward at all times, sliding forward with the cutting edge. Those who learn to cleave often make the same mistake: they try to chop something with a knife. A knife is not an ax or a saber; it does not need to cut. A knife should be used to cut and dissect. After mastering this figure eight, I recommend mastering the horizontal figure eight, the infinity sign, and a smooth transition back to the vertical figure eight (Fig. 30, 31).
Rice. 30. Performing a horizontal figure eight with a straight grip
Rice. 31. Performing a horizontal figure eight with a reverse grip
After the vertical figure eight - again the infinity sign. When you learn to always keep the blade with the cutting edge forward, you will be able to easily and freely make cutting blows in any direction and at any level of the enemy’s body.

Knife fighting in the modern world is becoming more and more widespread. The secret to the success of a knife fight is quite simple: we constantly see in news reports how robberies are committed using piercing weapons. A knife is the most common murder weapon in domestic conflicts; moreover, today a folding knife is an almost integral part of a man’s everyday equipment. That is why the ability to defend against a knife and use a knife for self-defense are vital skills for ensuring the safety of any modern person.
The use of a knife in hand-to-hand combat is almost always an aggravating circumstance, but let's figure out what's better for you: getting a prison sentence or dying at the hands of some scum? Naturally, most sane people will choose life, even if it is necessary to use weapons to protect it.
However, there are masters of knife fighting who believe that protecting yourself from a knife is an absolutely useless exercise, that it is impossible, and that searching for technical solutions to get out of borderline situations is a waste of time. In doing so, they claim that the best defense against a knife is a escape knife or another knife, garnering many rave reviews for their honesty and competence. Such statements are an unforgivable substitution of the conditions of the task, designed to hide the illiteracy and almost complete lack of knowledge of these “experts” in matters of applied hand-to-hand combat techniques. The question was posed incorrectly! Indeed, a collision with an armed enemy is an extremely negative situation, from which, nevertheless, it is necessary to look for a way out. Such an installation plan leaves the students of these masters with nothing, and the master himself, having done and shown absolutely nothing, is reputed to be a fine fellow and handsome.
In addition, they say that a normal enemy (!!!) will not attack like a sucker, collapsing with each blow, but will attack in such and such a way (as the master himself came up with), against which it is simply unrealistic to defend ... Well, well... This video shows real knife attacks to help you understand what such advice leaves you with. After looking at it, count where and how many times the victim could have armed himself or run away, as “real masters” advise:
After watching this video and imagining yourself in the shoes of any of these people, it is easy to understand that the situations are terrifying. Of course, it is best to try to avoid them, but what to do when this fails?
What is said in this video does not apply to all schools of knife and hand-to-hand combat, but only to some. Not everyone makes the mistakes listed in the interview. There are good specialists with real experience in the field of knife fighting and defense against a knife. The only purpose of this video is to draw your attention to the fact that the phrase “there is no defense against a knife” belongs, most often, to people who are incompetent in matters of applied hand-to-hand combat and who are trying to seem like professionals. We know that there is no one hundred percent protection from anything, we know that it is better to run away, but this is not a solution to the problem: show at least something!
Knife fighting is often presented as a separate discipline, in which competitions are even held. There is a judge, an arbitrator, and certain equipment. I cannot agree with such trends in the field of martial arts. The problem is that, in most cases, real weapons are replaced with mock-ups, and a sporting knife fight becomes an end in itself, which is unacceptable for real practice. When training in both hand-to-hand and knife combat, sparring and full contact combat are absolutely necessary. Of course, in order to ensure the safety of the participants in the fight, the presence of protective equipment is extremely necessary. However, life is a harsh thing. There are no helmets, no gloves, no groin shells, no wooden knives. Therefore, a number of adjustments are necessary. When teaching techniques of both real street hand-to-hand combat and knife fighting, there should be no framework or restrictive settings.
Any fight is held according to one or another rules. Moreover, the equipment used in the process is often decisive: with a helmet, in some cases, face protection can be neglected. At the same time, it is difficult not to notice the great tendency on the part of the fighters to rashly exchange blows, which is completely natural - after all, there is a right to make a mistake.
Conducting such fights without taking the necessary safety measures will inevitably lead to injuries. But pay attention to how the technique of one or another sport changes as soon as the protective equipment disappears and additional conditions appear: no one rushes into the embrasure. Athletes begin to act very carefully, because one wrong move can result in defeat.
It is this aspect of training in modern systems of hand-to-hand and knife combat, in my opinion, that is the weak link in terms of the applied application of the acquired skills. Watching the videos one after another, I could not help but be amazed at how boldly, at times, competitors throw their armed hand forward, without fear that the enemy will cut off their fingers. This is understandable, because the price for such a mistake in competitions is a lost ball. But for me, as a person who has dealt with knives and knife attacks, this approach remains a mystery. And the reason is simple: as soon as you see a real knife in the hands of the enemy, you will simply be dumbfounded. There will be no talk of any jumping or fencing, believe me. Your brain will not allow you to take your life carelessly and start jumping and twitching next to your opponent. In a real attack situation, one wrong move means death.
The second point that I noticed in modern trends in knife fighting is the emphasis on maneuverable combat. For a reason unknown to me, today it is customary to perceive the MODEL of a duel as reality. However, I am absolutely convinced: no matter how free the rules of combat are, they will still be designed to limit the use of the most traumatic, and, therefore, effective methods of hand-to-hand and knife combat. That is, even with all your desire, you will not be able to simulate a fight close to reality. Despite the fact that modern hand-to-hand combat systems are progressing at a frantic pace, and the athletes participating in competitions are ten heads taller than their predecessors, they reveal only a small facet of the technology available to humans, and are designed to ensure a purely sporting victory.
In our club we regularly hold full contact fights and sparring according to different rules. We fight in boxing, and according to rules close to Muay Thai, and in full contact, and we spar conditionally, using applied techniques... But none of these types of fights can be called ideal, or at least a model close to the realities of real hand-to-hand combat.
When conducting full-contact fights, we practice very specific technical actions: for example, when we fight in boxing, we focus specifically on fist fighting. However, as soon as we connect our legs, the distribution of emphasis in the fight changes dramatically, and what was extremely effective in boxing sparring completely stops working. The same can be said about wrestling.
In order to preserve the technical design of a particular martial arts, it is necessary to regulate it with clear rules and isolate it from traumatic and inconvenient techniques. For example, with the creation of a version of the Kyokushin karate competition with punches to the head, the result was not karate, but another type of hand-to-hand combat, which, frankly speaking, is not really needed. The unique pattern of the style, however, completely disappeared.
I say all this only to draw the reader’s attention to one simple fact: by adding new permitted technical actions, manipulating the rating system and changing the conditions of the fight, you can get a completely different type of hand-to-hand combat, built on completely different principles.
In the sports environment, the most realistic and practical type of hand-to-hand combat is mixfight, where the boundaries between martial arts are erased, and a completely new style is formed, consisting of elements that are effective and appropriate in the given context. It must be remembered that this system is designed specifically for use in the ring according to the given rules. With the appearance of weapons in the hands of the enemy, the situation will change dramatically. Sometimes, looking through the recommendations that athletes or mixed martial arts stars give on protection from a knife or self-defense, the impressions of the demonstrated technique leave, to put it mildly, ambiguous...
At the same time, with the help of martial arts, you can extremely successfully fight against one or more unarmed opponents. However, even famous champions do not always emerge victorious in street fights, making absolutely stupid mistakes.
I say all this only to show the reader: you cannot equate a street fight with a sports fight (just as you cannot compare martial art and combat sports).
In a real fight, no one maneuvers, rapprochement occurs quickly and unexpectedly, and the battle has to be fought in completely different conditions under completely different circumstances.
Now let’s imagine: if an unarmed fight with minimal addition of new nuances is transformed beyond recognition, then how will a knife fight be transformed if you replace wooden knives with real ones! Believe me, the difference will be enormous! You will definitely notice it.
When you play a role-playing game called knife fighting, then no matter how hard you try to imagine that the piece of wood that is in your hand is that very real knife, still, deep down, you will understand that it is just a piece of wood. There is NOTHING about it that makes a knife a knife. At the same time, you will act accordingly. And we observe how representatives of schools of knife fighting and all kinds of fencing make such stupid and unjustified movements that they would never dare to do in reality.
The reader should naturally ask the following question: how to learn knife and hand-to-hand combat, and what is the criterion of mastery, if not sparring?
The answer is this: when studying hand-to-hand and knife fighting techniques, sparring and full-contact fights are, although integral, but only ONE OF the components of the general methodology for preparing a fighter for a real fight. At the same time, there must be an absolutely clear connection between the technique that you practice in training and the technique that you use in battle. At its core, a duel is an exercise in which you can perform some of the techniques you have learned, without holding back, at high speed on a resisting opponent. But only a few!
Real, applied techniques like hand-to-hand and knife fighting cannot be practiced in this mode: for the most plausible simulation of a real fight, a reasonable amount of convention is necessary in practicing technical actions with a partner, using REAL weapons and real, prohibited hand-to-hand combat techniques.
These include: blows to the groin, eyes, throat, bites, head blows, neck twisting, attack of the spinal column, attack of joints against the natural bend, traumatic throws, painful effects on the hands and fingers, absolute freedom in striking techniques with elbows, crushing blows , hitting the enemy against terrain elements, spontaneous use of improvised objects, grabbing vulnerable parts of the enemy’s body (genitals, hair, throat...), etc.
Knife fighting in the modern world is a continuation of hand-to-hand combat, which must be treated as a weapon, and not as a sport. To date, I am not aware of knife fighting systems that exist independently of contact martial arts. Accustom yourself to the idea: when defending yourself from a knife, you will not have a second chance, just like in a knife fight - almost any missed blow can neutralize you, making it impossible to continue the fight.
People’s attitude towards the practiced system of hand-to-hand combat migrates to work with weapons, where, instead of clear and precise movements, useless jerking and a competitive aspect are cultivated. If the main thing in sports is to win, then you can safely go for an exchange and win solely due to the spirit. In knife fighting, street fighting and working with absolutely any weapon, this approach is categorically unacceptable.
I would also like to note that the basic attacks that are practiced by most people and are effective in training sparring, like the very manner of knife fighting, do not correspond to reality, because in life no one will jump around you for hours. Most often, the enemy will try to grab you and simply kill you, using the most common technique in knife attacks, called the “sewing machine.”
In reality, there is no sparring - knife fighting does not involve working on multiple counts. They only belong in training as an exercise. In life, attacks occur with lightning speed and decisiveness: whoever missed it first died. Therefore, any fuss and sloppiness, as well as an untimely increase in the speed of practicing knife fighting techniques to the detriment of quality, should be completely excluded from practice.
Knife fighting is an exclusively applied discipline, which should not be distorted and subject to the strong influence of sports practice. In order to master knife fighting at a decent level, you need to study the basic elements of the art, practice strikes with a real knife, learn how to defend yourself and spar with a model, and only then move on to using real, military weapons in practicing techniques.
Throughout the entire time of training in knife fighting, the student must get used to the weapon, become accustomed to it, learn how to care for and competently handle his knife. It is advisable to spend as much time as possible with weapons in real life. You can even take a knife with you to bed. A knife should become an integral part of your wardrobe - it is your personal weapon, an extension of your personality!
Be careful in your training. I wish you success!

In order to consolidate and preserve acquired knowledge and skills, combinations of actions with a knife, knife fighting techniques and knife fighting complexes are studied and practiced.
Army knife fighting tactics
After mastering and consolidating the basic technique of knife fighting, the tactics of knife fighting and the use of this technique in various possible combat situations are studied separately. To do this, tasks that can be solved using knife fighting techniques are determined, probable situations are modeled and options for the necessary actions to solve these problems are worked out. For example, a variant of the technique of removing a sentry using a knife fighting technique in a covert approach from behind is being practiced.

Particular attention at this stage is paid to the tactics and technique of knife fighting in order to destroy vital centers on the enemy’s body.
Knife fighting school based on the operational karate system
The main task of the next stage in teaching the art of hand-to-hand combat with a knife after mastering the basics of the domestic army art of knife fighting is to improve the acquired skills, abilities and tactical knowledge.
To solve this problem, a system developed by specialists of the KGB of the USSR and known as the system of operational karate and hand-to-hand combat can be used.
Based on this system and training methods, the skills of hand-to-hand combat with a knife are improved and each skill is brought to full automatism in three directions.
First directionFor independent and individual training, special exercises and techniques have been developed and practiced to improve the following skills necessary in knife fighting:
Movement in a knife fight;
Stabbing with a knife;
Cutting blows with a knife;
Combinations with a knife.
Second directionLeaving the attack line;
Counter attack technique;
Techniques for controlling the enemy;
Knife fighting techniques in the fight against an armed enemy;
Conducting combination hand-to-hand combat using a knife and other hand-to-hand combat techniques.
Third directionA competitive sports direction, when training is carried out in the mode of conditioned, semi-conditioned and free combat.
In the conditioned combat mode, in pairs, the technique of working with a knife is practiced in the mode of pre-standardized techniques, according to classical and other methods of action.
In the semi-conditional mode, the trainee is given a specific task, a knife attack technique is assigned, and the conditions for this attack are set.
In the freestyle combat mode, all possible knife and hand-to-hand combat techniques are practiced in the form of a competition, which are used situationally and in accordance with the development of the situation.
Exercises to practice movement techniques in knife fighting
To practice movement techniques in knife fighting, several standard exercises are used that are easily systematized. The movement itself is carried out at conventional points, alternately with steps of the left and right foot. To make it easier to master the technique of these exercises, these points can be designated by drawing (drawing) on the surface of squares or circles and designated numbers 1 to 4. To describe the steps, the left leg can be designated as the letter “L” and the right leg as “P” . These exercises are similar to playing hopscotch and, being quite simple, as a basic element they can be used to simulate movements of any level of complexity, and gradually become more complex as the technique of movement is mastered. (Fig. 2).

Technique for practicing combinations with a knife
The art of knife fighting teaches not only the mastery of individual techniques, but also the ability to combine them: cutting and stabbing with a knife are combined with various hand-to-hand combat techniques.
Combinations in knife fighting can consist of either two or three or a significantly larger number of elements drawn from different sources. As a rule, combinations are executed and realized spontaneously during a fight, but some sequences are constant - like katas in karate.

When the required minimum of combat techniques has already been mastered, the next stage of training begins - the development of key skills that will help you win even over a stronger opponent.
Technique for leaving the line of attack
As in any other form of hand-to-hand combat with weapons, in knife fighting it is important to correctly move away from the line of attack. The most reliable method of defense, leaving the line of attack confuses the enemy and gives you the opportunity to take the initiative into your own hands.

Counter attack technique
Development of techniques for evading an attack - counter attack: simultaneously with a maneuver that disorients the enemy, you strike with a knife and seize the advantage.
A counter attack requires you to react, think, and move faster than your opponent, but allows you to completely change the balance of power to a more advantageous one with one blow.

Counterattack technique
The art of knife fighting involves not only attacking, but also counterattacking tactics. In certain cases, a counterattack can be much more effective than an offensive fighting style.
Unlike a counter attack, a counterattack does not combine defense and attack, but is a sequence: first defense, then strike. At the same time, you can repel the enemy’s onslaught not only with a knife, but also in any other way convenient for you: leave the line of attack, stop or beat off the hand with the knife, or deliver a distracting blow. And only then, when the enemy has lost momentum and lost the initiative, launch a counterattack.

Enemy Control Techniques
One of the most effective techniques in knife (as well as hand-to-hand) combat is controlling the enemy. Give him your own battle conditions, do not let him change the distance and/or move freely relative to you. Deliver distracting and shocking blows to vulnerable points to neutralize it. Use your free hand to grab your opponent's clothing, arm, or weapon. Once you have succeeded, he is in your power - just for a couple of moments, but you must be ready to seize the moment. Pull your opponent towards you or, conversely, push him so that he loses his balance and finds himself at a disadvantage, and immediately attack him.

From the starting position (facing the opponent at close/medium distance), step forward with your left foot and grab the opponent's left sleeve with your left hand. With all your weight, sharply pull the enemy down towards you, throwing him off balance and remove the knife from the sheath.
Turn counterclockwise in place and pull the opponent's left arm with your left hand to your left while cutting downwards. Continuing to control the opponent's left hand and direct his movements, complete the attack (photos 499–505).

From the starting position, when the enemy has grabbed your right hand with the knife with his right hand, with the movement of your right hand, lift the blade of the knife up, placing its blade in front of the wrist of the enemy’s right hand on the inside. Immediately, with a short throw forward, and at the same time moving to the right, throw your right hand up, attacking the opponent’s wrist with a cutting blow of the knife. With your left hand, grab the attacker's right hand and quickly move back with your left foot, while simultaneously delivering a cutting blow to the body with a knife. Techniques and techniques of knife fighting in the fight against an armed enemy
A knife can be used effectively even against a person armed with a firearm. In this case, it is necessary to combine the actual techniques of knife and hand-to-hand combat.
Reception No. 1Technique for controlling an enemy when threatening with a pistol when approaching from the front.
From the starting position, when the enemy threatens with a pistol when approaching from the front, step forward with your left foot to the left from the line of fire and with your left hand move the enemy’s right hand, armed with a pistol, to the right. Immediately grab the opponent’s right hand with your left hand and at the same time remove the knife from its sheath.
Turning in place to the left and maintaining a grip on the opponent's right hand, perform a painful hold - lever the hand outward, and at the same time attack the wrist of the opponent's right hand with a cutting blow to the inside of the wrist. Counterattack with a knife thrust from above and disarm your opponent (photos 539–546).

A technique for controlling an enemy when threatening with a pole or stick when approaching from the front.
From the starting position, when the enemy threatens with a stick (pole), with your left foot stepping forward to the left, grab the end of the stick with your left hand and, sharply turning to the right in place, pull it past you, causing the enemy to lose his balance. At the same time, remove the knife from the sheath with your right hand.
Turning on the spot to the left and moving the stick over the top to your left, use it to control the enemy. Make a cutting blow with a knife to his right hand so that he releases the stick from it. Step forward with your right foot and attack your opponent with a stabbing blow from above.
With a quick step back with your right foot, deliver a cutting blow to the opponent's left hand with a back-and-forth motion, forcing him to drop the weapon (photos 553–562).

Continuing to move forward, from the right-hand stance of the same name, apply a diagonal cutting blow with a knife from bottom to top from right to left and complete the counterattack with a backhand thrust. Take the enemy's weapon (photos 601–609).

Modes of conditioned, semi-conditioned and free knife combat
The next stage after mastering the basics of technique and tactics of knife fighting is practicing actions in conditioned, semi-conditioned and free combat.
Training is carried out in pairs, which allows you to develop a sense of distance, a sense of danger and the reality of battle, dexterity and tactical vision of fighters.
Among other things, it is during such training that techniques and techniques that are best suited for a particular student are improved and practiced - those skills that can be applied to the enemy, taking into account his individual characteristics, such as weight, height, level of professional and tactical training .
During such training, an individual fighting style is developed that is optimal for the physical, professional and tactical training of a particular fighter.
During free combat, all previously learned techniques are practiced against a simulated opponent. In this case, the task of each fighter is to hit the opponent, but not to fall under his blow.
In semi-conditional combat mode, victory is credited to the one who completed a certain task received from the instructor.
Typically, semi-conditional combat is much more difficult than free combat - it can impose restrictions on the arsenal of techniques and tactical moves.
School of combat and special training
In addition to general technical and tactical training, the system of operational karate and hand-to-hand combat includes three specific stages of training:
Studying and practicing strikes on vital organs.
Studying options for using a knife to solve special problems (for example, removing a sentry).
Practicing techniques for countering an armed enemy, modeling the enemy’s behavior and the art of controlling him.
During the first of these stages, the fighter must master the required minimum of the following strikes.
