Place the pot of water for the soup over medium heat. Add some salt. While the boil begins, there will be time to prepare and chop the vegetables. Finely chop half an onion, chop carrots and potatoes into strips or bars.

Pour the potatoes into boiling water and cover loosely. From the moment the water begins to boil again, cook for 10-12 minutes, until almost soft.

At the same time, prepare the roasted vegetables. Place the onion in well-heated oil and saute over low heat for three minutes until translucent. Add carrots, mix, fry for another three minutes, without browning.

To prepare the minced meat, grind the beef through a meat grinder twice, adding the onion. If you are preparing meatballs from store-bought minced meat, mix it with grated or finely chopped onion (you can do without onion if you wish).

Add some salt to the minced meat and beat it. Pinch off small pieces and roll into meatballs in your palms.

Place the meatballs in the pan with the potatoes. Gently pry it with a spoon so that it doesn’t stick to the bottom.

After two or three minutes, the meatballs will begin to float. Add the fried vegetables and continue to cook for another ten minutes, not allowing the broth to boil too much. At the end of cooking, throw bay leaves into the soup, you can flavor it with peppercorns, and for a brighter, golden color of the broth, add a little turmeric to the soup.

Turn off the soup and let it brew for 5-10 minutes, covered. Serve with sour cream or fresh herbs. Bon appetit!
