It didn’t immediately occur to me what to do with the leftover puree. But a friend suggested frying potato pies or zrazy. And then I remembered how I tried potato zrazy with fried minced meat and cabbage at my grandmother’s. And a couple of years ago, after watching Yulia Vysotskaya’s program, I was preparing potato zrazy with salmon. Otherwise, the puree remains like this; after that, if you don’t eat it for several days, you can prepare so many different delicious dishes from the puree.

In our family we never cooked zrazy, but my grandmother sometimes did, not from leftover mashed potatoes, but cooked mashed potatoes specifically for this purpose. She said that preparing this dish is simple, potatoes, flour, egg and filling.
Potato zrazy is a very tasty and satisfying dish. It is very easy to prepare, especially if you have mashed potatoes prepared in advance. It often happens that for a holiday or birthday, you prepare a lot of puree and it remains. But it doesn’t matter, there are so many options for different and very tasty potato dishes. For example, potato casserole with minced meat, zrazy made from mashed potatoes.
How to make potato zrazy from mashed potatoes
Ingredients:
- 500 grams of mashed potatoes
- 1 egg
- 1-2 tbsp. spoons of flour
- , pepper to taste
- vegetable oil
I have a lot of mashed potatoes left, so I’ve already made them several times. What I would like to note is that the children liked the zrazy, especially with sour cream. My son even called zrazy potato pies.
You must add milk and butter to mashed potatoes, then the zrazy will turn out very tasty.
If the potatoes are from the refrigerator, then they need to be slightly warmed or left on the table so that they come to room temperature, making it easier to form zrazy.
Place mashed potatoes in a bowl. Add egg, flour, salt and pepper to taste. My eggs are rustic. You can add greens, but this is optional. Mix everything thoroughly.
If you just cooked the puree, let it cool. And then start cooking right away.
When everything is thoroughly mixed, we begin to form zrazy. They can be in the form of cutlets, pies or round shapes. Do as you please.
The finished zrazy should be rolled in flour on both sides. If you are making zrazy with filling, then take part of the potato, put a teaspoon of filling in the middle and cover the flatbread with mashed potatoes, forming a pie.
Make zrazy out of all the potatoes, placing ready-made ones sprinkled with flour on a plate or board. Then it will be very convenient to fry the zrazy.
Meanwhile, put a frying pan on the fire and pour vegetable oil into it. Place zrazy on a heated frying pan.
Fry zrazy from mashed potatoes on both sides until golden brown. I wanted to make them in the form of pies. This is how they turned out for me.
So we fry all the zrazy that you made. Zrazy can be placed on a plate previously covered with a paper towel to absorb excess vegetable oil.
It turns out to be a very tasty, satisfying dish, especially with sour cream. Of course, zrazy will turn out even tastier with minced meat or cabbage. Next time we'll cook it.

Meat filling. The most popular is the meat filling. Raw minced meat is not suitable for zraz, so minced meat must first be fried with onions in vegetable oil. Fry until done.
If desired, add carrots to the minced meat. For 300 grams of minced meat, 1 onion. You can add carrots if desired. To do this, you need to grate it on a fine grater. You can use any meat: chicken, pork, beef.
Cabbage filling. The filling can be either fresh or sauerkraut. Which one do you like better? If the cabbage is sauerkraut, then just fry it in a frying pan, after squeezing it out.
Fry cabbage with onions. We fill potato zrazy. From the remaining potatoes I made zrazy with cabbage for the children. I love it when there is a lot of filling, be it dumplings or zrazy.
If you want to make zrazy from fresh cabbage, then you need to cut the cabbage, fry it, add onions, carrots and a little tomato. Fry until done.
Fish filling. I once prepared zrazy stuffed with red fish. I boiled the fish, removed the bones, chopped it, added finely chopped dill, salt and pepper. I filled zrazy with this filling. Served with sour cream. It's very tasty.
Mushroom filling. If you like mushrooms, then they are quite suitable for the filling. Mushrooms need to be fried with onions until cooked in a frying pan. Champignons are usually used.
Egg filling. It's like a filling for pies with egg and onions. Boil the eggs and chop them. Finely chop the greens and add to the eggs. Salt and pepper to taste. Add a little melted butter to the filling. This way it does not crumble, but becomes more homogeneous.
You can add a little hard cheese to the filling.
They also prepare the filling for zraz from sausages, sausages or canned fish. If you use sausage or frankfurters, then they need to be chopped and combined with onions fried until golden brown.
And if you want to fill zrazy with canned fish, I recommend using canned fish in oil. The oil must be drained and the canned food must be mashed with a fork. You can add fried onions to the fish. They also add boiled rice.
In general, there are filling options for every taste. But my favorite is zrazy with cabbage. As you can see, preparing them is not at all difficult. If you have leftover mashed potatoes, don't worry about what to do. Prepare potato zrazy. It can be with filling, or without filling. Bon appetit and all the best to you!
Next about boiled meat. For me it’s always beef and chicken, boiled with spices, celery, onions and carrots. The latter can also be twisted with meat if desired. I boil it in a pressure cooker and not a little. Part of the rolled meat is used for Zhemaichay, and the rest, for example, for pancakes with meat or buns-pies. Cool the meat slightly and grind it together with the onion through a meat grinder.
Next, add the egg, flour, salt and pepper to the dough and stir well.
Fry our meat twisted with onions in a frying pan for about 5 minutes, pour in the broth, taste for salt and pepper, hold for a couple more minutes under the lid and turn off. If it seems a little dry, add a little more broth or water. With wet hands, form a kind of pancake in the palm of your hand and place the meat in the middle.
Next, we connect the edges and form a flat pie.
Roll it in flour on both sides.
Heat a frying pan, pour in a small amount of vegetable oil and fry our pancakes on both sides over low heat for about five minutes.
Serve with sour cream or sour cream sauce. I will offer you an approximate recipe for the sauce: 1 tbsp. l. dilute flour in a small amount of milk, add about 300 ml of milk, 20 g. butter, bring to a boil + 100 gr. sour cream, 1 chopped garlic clove, salt and a little pepper to taste, heat and turn off. If you use seasonings like Vegeta, replace the salt with seasoning. Bon appetit!

Zrazy were prepared from a single piece of meat, in which the filling was wrapped - mushroom, vegetable, etc. Today there is a wide variety of recipes for preparing zraz. Peel the onion, wash and cut into very small pieces, add to the minced meat. Add salt, garlic and ground pepper, mix everything well. To make the filling juicier, you can add a small amount of bread, previously soaked in water or milk, to the minced meat, as well as to the cutlets.
Pour vegetable oil into a heated frying pan and heat it. Place minced meat in a frying pan to prepare the filling for potato zraz. With constant stirring, fry the minced meat to the desired degree. Place the prepared filling from the frying pan, add chopped dill or parsley to it. Mix.
Wash the potatoes, peel them, cut them into 4 parts and put them in salted boiling water to cook. Be sure to add a bay leaf and a small onion to the water to add flavor to the potatoes.
When the potatoes are cooked, remove the onion and bay leaf and drain the water. Mash the potatoes, add softened butter, ground black pepper, and flour. Mix everything and beat a chicken egg into the mashed potatoes. Mix the puree well until smooth.
Now you can start cooking potato zraz. Sprinkle a little flour on a cutting board. Use your palm to spread it over the board. Take mashed potatoes with a tablespoon (so that there is a heap) and place it on a board with flour. Form the potatoes into a flat cake. Place the prepared filling in the center of the flatbread and cover it with potatoes, like a pie.
Roll the finished “cutlet” in breadcrumbs and place on the board.
Do this with all the mashed potatoes and toppings.
Fry potato zrazy with meat in a frying pan with vegetable oil over medium heat.
Since the frying process proceeds quite quickly, keep an eye on it constantly. Fry the zrazy until the desired color of their surface.

Algorithm of actions:
- The first thing you need to do is peel and rinse the potato tubers. Place in a cold container and cook until fully cooked.
- Drain the water in which the potatoes were boiled (or use it to make mashed potatoes). Make mashed potatoes by mashing them with a masher or blender. Add hot milk, stir.

How to cook potato zrazy in a slow cooker - step-by-step photo recipe
Traditional zrazy can be prepared not only from minced meat, but also from potatoes, and the filling, on the contrary, can be made from meat. It turns out economical, unusual and very tasty! Any meat is suitable for the filling, but it is with minced chicken that the zrazy turns out especially tender.
Ingredients:
- Potatoes – 700 g.
- Salt (for puree and minced meat) - to taste.
- Eggs – 2 pcs.
- Caraway.
- Flour – 90 g.
- Ground white crackers.
- Butter – 25 g.
- Minced chicken – 250 g.
- Pepper.
- Onion – 180 g.
- Finely chopped fresh dill - 1 tbsp. l.
- Sunflower oil – 25 g.
For the sauce:
- Mayonnaise – 120 g.
- Garlic – 1 clove.
- Chopped dill.
- Salt.
Step-by-step preparation of potato zrazas:
1. Pour water into the multicooker bowl. Place the steaming container. Place the peeled and washed potatoes into it. Turn on the “Steam Boiler” program. Boil the tubers for 30 minutes.
2. Transfer the potatoes to the pan. Immediately puree it with an immersion blender or masher until smooth. Cool slightly.
3. Add eggs to the puree.
4. Add flour, black pepper, salt and cumin (about 0.5 tsp).
5. Stir with a spoon. You will end up with a soft dough that looks like a thick puree.
6. Set the bowl of dough aside for now and start preparing the filling. Pour the water out of the bowl and wipe the container dry. Put in butter. Finely chop the onion and pour into a bowl. Install the “Frying” program.
7. Sauté the onion until translucent. Add minced chicken.
8. Stirring with a spatula, bring it to a crumbly state. At this stage it will be almost ready. Add dill and salt.
9. Turn off the multicooker. Transfer the minced meat to a plate.
10. Wash and dry the bowl. Pour in sunflower oil. Select the "Bake" function. Turn on the device so that the oil begins to heat up. Place ground crackers on a plate. Spread cling film on the table. With hands moistened in cold water, pinch off a portion of the potato mixture (one fourth) and place on film. Form into a thick flat cake. Place some minced meat in the middle.
11. Using cling film, fold the flatbread in half.
12. Lightly wet your hands with water again, otherwise the potatoes will stick to dry hands and immediately fall apart. Free the top of the product from the film. Place one hand under the film with the cutlet, which you place in the other hand, but without the film. Gently roll the cutlet in ground breadcrumbs.
13. Immediately place it in the bowl of oil.

15. While the zrazy is baking, prepare the sauce. Place mayonnaise in a cup, add chopped garlic and chopped dill (to taste). Add some salt.

- Potatoes – 9-10 pcs.
- Chicken eggs – 2 pcs.
- Wheat flour – 5 tbsp. l. (a little more flour will be needed directly when molding the zraz).
- Vegetable oil - for frying cabbage and ready-made zraz.
- Cabbage - ½ head, medium in size.
- Tomato paste – 1 tbsp. l.
- Water – 1 tbsp.
- Salt, spices.
Algorithm of actions:
- Since the potatoes take at least 40 minutes to cook, it is worth starting with this process immediately. When the water in the pan with potatoes boils, add salt and reduce heat. Cook until done.

- Chicken eggs for dough – 1-2 pcs.
- Flour – 5 tbsp. l.
- Breadcrumbs.
- Salt.
- Chicken eggs for filling – 5 pcs.
- Onion greens – 1 bunch.
- Vegetable oil.
Algorithm of actions:
- Salt and boil the potatoes; for flavor, you can add bay leaves and onions (dip, boil, remove).
- Strain the water. Cool slightly, knead thoroughly and knead the dough, adding eggs and flour.

- Chicken eggs – 1 pc.
- Turkey fillet – 150 gr.
- Onions – 2-3 pcs.
- Ketchup – 2-3 tbsp. l.
- Sweet bell pepper – 1 pc.
- Cheese – 150 gr.
- Marjoram.
- Salt.
- Vegetable oil.
Algorithm of actions:
- The first stage will not cause any difficulties - you just need to boil the potatoes until tender.
- Grind the hot potatoes with butter into a puree. Cool. Add flour and eggs. Knead the dough.
- Form zrazy (without filling). Roll in breadcrumbs. Fry in oil until a fragrant crust appears.
- Transfer the zrazy to a large roasting pan. Sprinkle with salt and marjoram. Sprinkle with ketchup.
- Cut the turkey into bars. Fry in oil.
- Chop the onion thinly and fry in another frying pan, also in oil.

Since zrazy are prepared from potato dough, they are very good during Lent - healthy and filling. You can cook it with or without filling; it is clear that with vegetables or mushrooms the dish will be more tasty.
Ingredients:
- Potatoes – 1 kg.
- Flour – 4 tbsp. l.
- Flour for adding when forming zraz.
- Champignons – 0.5 kg.
- Vegetable oil.
- Sugar, black pepper, salt.
Algorithm of actions:
- For this recipe, you can start the process by preparing the filling. Peel the onion and chop. Chop the champignons too.
- Fry in oil in different containers. Combine, add spices and salt (a little at a time). Leave to cool.
- Boil the potatoes. Mash into a homogeneous mass. Add a little salt and sugar. Add flour (you may need more flour than indicated in the recipe). Knead the dough until it is soft and elastic.
- Wet your hands with water and separate small portions of the dough. Form a flat cake directly into your palm. Place the filling on this flatbread. Helping with your other hand, form immediately.

- Flour – 4-5 tbsp. l.
- Chicken eggs – 1 pc.
- Salt.
- Carrots – 1 pc.
- Onions – 1-2 pcs. small in size.
- Fresh aspen boletuses – 300 gr.
- Spices.
Algorithm of actions:
- According to tradition, you first need to boil the potatoes. Mash to a puree, adding a little flour and an egg.
- For the filling, saute the grated vegetables.
- Boil and fry the mushrooms, cut into pieces.
- Combine with vegetables.

Potato zrazy
Potato zrazy is a fairly simple dish, which is prepared from the most affordable product in the post-Soviet space, that is, potatoes. That is why the second name for potato zraz is “kartoplyaniki”. Despite the simplicity of the recipe, this dish can be safely served at the holiday table, of course, if you slightly supplement the standard recipe with some additional zest ingredient.
The basis of zraz is regular mashed potatoes. It is enough to boil the potatoes and then pound them with a stomp. You can also grind them into pulp using a meat grinder or blender. At the same time, water is not added to the potato mass, despite the fact that it is sort of like the “dough base” of the future dish, but eggs, flour and butter are added. It is from the resulting mass that the “dough” is kneaded, from which zrazy are subsequently sculpted.
If everything is standard with the preparation of the “dough”, then with the choice of filling there are simply no standards! It uses meat, fish, mushrooms, vegetables, and this list can be continued and supplemented with any appropriate products. Thanks to this, there are so many potato recipes. That is why you can always come up with your own version of a recipe that no one has tried before.
Sculpting, or as it is more correct to say, forming images is simple. We make a flat cake from the dough on our palms and place the filling on it. After that, we seal them like regular pies that you make from regular yeast dough. After that, put them in a frying pan or baking sheet and fry or bake until cooked.
