Ingredients:
- 2 large chicken breast fillets
- 1 red bell pepper
- 1 green bell pepper
- large bunch of green salad
- 1 medium red onion
- 100 g olives with pepper
- 20 g roasted almonds
- 50–70 g feta
- vegetable oil for lubrication
For refueling
- 2 tbsp. l. extra virgin olive oil
- 1 tbsp. l. white wine vinegar
- 1 tsp. any mustard to taste
- 1 tsp. Sahara
- freshly ground black pepper
For the marinade
- 3 tbsp. l. olive oil
- 1/2 tsp. ground paprika
- freshly ground black pepper
Step-by-step preparation of salad:
Whisk together the salad dressing ingredients. Tear the lettuce leaves with your hands. Peel the onion, cut into thin rings, cut the olives into 4 parts. Peel the sweet peppers and cut them into 2 cm wide strips. Pat the chicken breast fillets dry with paper towels. Mix olive oil, paprika, salt and pepper, brush the chicken breasts on all sides with this marinade. Place a sheet of thick foil greased with vegetable oil on the grill and fry the sweet pepper strips on it until soft. Let cool. Pat the breasts dry from the marinade and fry on a well-heated and oiled grill over medium coals, 4-6 minutes. from each side. If you are cooking in the oven, preheat it using the convection + grill mode to 180°C. Roast the pepper strips and chicken on a foil-lined rack for about 15 minutes. Cut the finished fillet across the grain into thin strips.

Ingredients
- tomato – 1 pc.
- iceberg lettuce – 1/2 head
- thin green onions - 1 small bunch
- romaine lettuce – 1/2 head
- watercress – 1/2 bunch
- lemon, juice only – 1 pc.
- hard-boiled eggs – 2 pcs.
- bacon – 6 strips
- frisee salad – 1 small head
- chicken fillet – 2 pcs.
- avocado – 2 pcs.
For refueling:
- red wine vinegar – 100 ml
- Sainte-Agur cheese – 125 g
- olive oil – 100 ml
- Dijon mustard – 1 tbsp.
- sugar – 2 tbsp.
Step-by-step cooking recipe:
Separate the salads into leaves, wash, dry and chop finely. Place in a large bowl and mix thoroughly. Fry the bacon in a preheated dry frying pan until crispy. Place on napkins. Cut the cooled bacon into small pieces. Wash the chicken fillet, dry it and cut into small cubes.
Fry the chicken pieces in the same frying pan where the bacon was fried for 8 minutes. Cut the avocado in half, peel and remove the seeds. Cut the pulp into thin strips and sprinkle with lemon juice. Wash the tomato, cut into 4 parts, remove the seeds. Grind the pulp. Divide the eggs into yolks and whites and finely chop individually. Wash the onion, dry and chop. Prepare the dressing. Mix vinegar, mustard, salt and pepper. Add olive oil in a thin stream, stirring constantly. Add grated Roquefort and sugar, stir. Place the lettuce mixture on a large round platter. Place chicken, avocado, bacon and tomato in rows on top. Sprinkle with chopped egg whites, yolks and green onions. Drizzle with dressing.
Green salad with poached pumpkin 2020 photo
Ingredients
- 1/2 head iceberg lettuce
- 300 g peeled pumpkin
- 250 ml white wine
- 1 tbsp. l. honey
- 1/2 cinnamon stick
- 3 boxes of cardamom
- 5 black peppercorns
- 5 allspice peas
- 1 lemon
- 50 ml pumpkin oil
- 1 small bunch of tarragon
- 50 g pumpkin seeds
- chili pepper - optional
Step-by-step preparation of salad:
Cut the pumpkin into 1.5 x 1.5 cm cubes, place in a saucepan along with honey, crushed peppercorns and cardamom pods and a pinch of salt. Pour in wine, place over moderate heat, bring to a boil and cook the pumpkin until soft. Remove the pumpkin with a slotted spoon and cool. Reduce the wine over moderate heat by half, strain. Remove the zest from the lemon, squeeze out 2 tbsp. l. juice Mix lemon juice, 2–3 tbsp. l. wine syrup and zest. Season with salt and pepper. While whisking, pour in the pumpkin oil. Add some of the sauce to the pumpkin and stir. Cut the salad into ribbons or pick it, separate the tarragon leaves from the sprigs, and mix with the salad. Season lightly and toss with pumpkin. Place in a salad bowl, sprinkle with seeds and sliced chili peppers.
